View Full Version : I found it! Greek Pasta Salad

A while back (may have even been on the old board) I posted that I had lost my favorite Greek Pasta Salad recipe. Lots of people offered their recipes, but none of them was exactly what I was looking for. Well, happy day, happy day - I found mine! Turns out it isn't from Cooking Light, but from Betty Crockers Great Main Dishes Without Meat.

Thanks to all who posted a recipe for me - & here is mine as I promised. The recipe says that it makes 5 servings - I think this is if you serve it as a main dish. I have brought this to many cookouts and there has always been enough for all.

Greek Pasta Salad
4 cups cooked orzo pasta
2 cups thinly sliced cucumber
3/4 cup chopped tomato
1/2 cup chopped green bell pepper
1/2 cup chopped red onion
1/4 cup finely chopped fresh parsley
1/4 cup olive oil
1/4 cup lemon juice
1/4 tsp salt
1 can (15-16 oz) garbanzo beans (chick peas) rinsed and drained
1 can (4 oz) sliced ripe olives or 1/3 cup sliced greek olives (from deli)
1/2 cup crumbled feta cheese

Mix all ingredients except cheese in a glass or plastic bowl. Cover & refrigerate at least 1 hr to blend flavors. Top with cheese. Makes 5 servings.

I've made this before (from the exact same cookbook) and I love it, especially in the summer when you don't feel like cooking or eating anything heavy.

How funny that this post showed up again right now because I made this for dinner tonight! We ate it with pita bread. It's very yummy and will be a repeat for sure! Thanks for sharing it to begin with Kelly!

I just made your salad last weekend, and finished the last of it today. It was very good! I shared some with my sister, and she also liked it. I did use more kalamata olives and feta than you called for, though. Both of those are favorite foods of mine. Thanks for posting the recipe. http://www.cookinglight.com/bbs/smile.gif

My sister Connie ^ turned me onto this pasta (she shared some with me) and I immediately made it!! I love Greek food (and feta cheese http://www.cookinglight.com/bbs/smile.gif ). It was DELICIOUS !!! It will be something I remake and it's EASY!!
