Does anyone have a good oat bran muffin recipe? We had some a couple of weeks ago at a B&B in NH, but the owner used a mix, which I would rather not do. But they were good! He put a thin layer of raspberry jam in the middle. Thanks for any suggestions.

I haven't made this recipe in particular, but my old roommate and I have both made other recipes from this book and they were very good.
From the Williams-Sonoma Muffins & Quick Breads: Oat Bran Muffins
2 c. oat bran
1 c. all-purpose flour
1/2 c. firmly packed brown sugar
4 t. baking powder
1 t. ground cinnamon
1/2 t. salt
1 1/4 c. milk
2 eggs
1/3 c. veg. oil
1/2 c. raisins (or up to a cup of any other dried fruit -- apricots, pears, prunes, etc.)
Preheat oven to 425. Butter standard muffin tins. In a large bowl stir and toss together the oat bran, flour,sugar, baking powder, cinnamon and salt. Set aside. Ina small bowl whisk together the milk, eggs and oil until smooth. Stir in the raisins. Add to the combined dry ingredients and stir until just blended.
Spoon into the prepared muffin tins, filling each cup about 2/3 full. Bake until a toothpick inserted in the center of a muffin comes out clean, 15-18 minutes. Cool in the tins for 3 minutes, then remove. Makes about 16.

Nonetheless, my fingers seemed in need of a little limbering, thus:
APPLE OAT MUFFINS
1 1/2 cups oat bran
1/2 cup whole-wheat flour
3 tablespoons brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup apple juice
1/4 cup skim milk
1 egg
2 tablespoons sunflower oil
2 tablespoons cooking apples, peeled, cored, and diced
2 tablespoons raisins
Preheat oven to 400ºF. Grease a 12-cup muffin tin with margarine.
Combine oat bran, flour, brown sugar, baking powder, salt, and cinnamon and set aside.
In a large mixing bowl, combine apple juice, skim milk, egg, sunflower oil and honey.
Add flour mixture, apples, and raisins and combine until just moistened.
FIll muffin tin and bake at 400ºF for about 20 miutes or until golden brown and a cake tester comes out clean.
Makes 12 muffins
Per muffin: 125 total calories; 4 Sat-fat calories
MOTHER'S OAT BRAN MUFFINS (Don't you always wonder whose mother this is always giving out recipes-- and whether or not "Mom" really knew how to bake...?)
...which reminds me of an old story my dad once told me about a sign in the window of a cafe which read: "Pies just like Mother used to bake = 50 cents. Our pies = 75 cents."

These oat muffins (an adaption of the Quaker Oats recipe) are made with no other grain but oat bran. They have twice as much oat bran and thus more soluble fiber than the preceding oat muffins. They are also delicious.
2 1/4 cups oat bran
1/4 cup brown sugar
1/4 cup chopped walnuts
1/4 cup raisins
1 tablespoon baking powder
1/2 tablespoon salt
3/4 cup skim milk
1 egg plus 1 egg white, beaten
1/4 cup honey
2 tablespoons sunflower oil
Preheat oven to 425ºF. Grease a 12-cup muffin tin with margarine.
Combine oat bran, brown sugar, walnuts, raisins, baking powder, and salt.
Add skim milk, eggs, honey, and sunflower oil. Mix until ingredients are just moistened.
Fill muffin tin and bake for 15 minutes or until just golden bown and a cake tester comes out clean.
Makes 12 muffins
Per muffin: 160 total calories; 6 sat-fat calories
ORANGE OAT MUFFINS
1 cup oat bran
1/2 cup wheat germ
1/2 whole-wheat flour
3 tablespoons brown sugar
2 tablespoons grated orange peel
2 teaspoons baking powder
1 egg
2 tablespoons sunflower oil
1/2 cup orange juice
1//4 cup skim milk
2 tablespoons raisins
Preheat oven to 400ºF. Grease a 12-cup muffin tin with margarine.
Combine oat bran, wheat germ, whole-wheat flour, brown sugar, orange peel and baking powder. Set aside.
In a mixing bowl, mix egg, sunflower oil, orange juice, and skim milk.
Mix in dry ingredients unit just moistened.
Carefully mix in raisins.
Fill muffin tin and bake for 15 minutes or until golden brown and a cake tester comes out clean.
Makes 12 muffins
Per muffin: 110 total calories; 4 sat-fat calories
APRICOT OAT MUFFINS
1/2 cup orange juice
1 cup dried apricots, chopped (easily done in food processor)
1/4 cup brown sugar
1 cup oat bran
1/4 cup wheat germ
3/4 cup whole wheat flour
2 teaspoons baking powder
2 tablespoons sunflower oil
1/2 cup skim milk
1 egg
Preheat oven to 400ºF. Grease a 12-cup muffin tin with margarine.
In a small saucepan, heat orange juice until boiling. Mix in apricots and brown sugar.
Remove saucepan from heat and cool apricot mixture slightly.
In a medium bowl, combine oat bran, wheat germ, whole-wheat flour, and baking powder. Set aside.
In a mixing bowl, beat together sunflower oil, skim milk, and egg.
Add dry ingredients and apricot-orange juice mixture to milk mixture and mix until just moistened.
Fill muffin tin and bake for 15 minutes or until golden brown and a cake tester comes out clean.
Makes 12 muffins
Per muffin: 135 total calories; 4 sat-fat calories
