Hi Everyone,

I am in search of a very good tasting baked beans recipes, either on the stove top or in the crock pot.

My friend had some in Memphis that she is still raving about that had a sweet taste with a whole lot of zing!

Any input would be appreciated.

Thanks

Terri

My mom makes a reallly great recipe that I've loved since I was little. I don't have the recipe on hand, but I can call her tonight and get it, if you'd like. Just let me know! http://www.cookinglight.com/bbs/smile.gif

I have a recipe for a baked bean casserole..involves cheddar, bacon, onions...unbelievably good yet very calorie laden. Let me know if you are interested.

Here's my favorite that my Grandma makes:

Baked Beans

2 cans canned navy beans, juice and all
1 Tblsp. brown sugar
1/4 cup dark molasses
1/2 tsp. dry mustard
1/2 tsp. worcestershire sauce
1 small onion, chopped in small dice

Saute the onion in a small amount of butter in a saute pan until cooked.

Combine the onions with the remaining ingredients in a deep pyrex dish. Bake for one hour at 325º.

i have never been a baked bean fan until i made these and now i make them just for myself! i brought them to a potluck and they disappeared in minutes. the darn best recipe i have ever had!

HOT AND SMOKEY BAKED BEANS
(note: i only used 4 chipoltes the first time around and that was good....maybe 5 next time) =)

Serve these hot or at room temperature.

6 bacon slices
1 1/2 cups chopped onion
1 1/4 cups purchased barbecue sauce
3/4 cup dark beer
1/4 cup mild-flavored (light) molasses
3 tablespoons Dijon mustard
3 tablespoons (packed) dark brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
4 to 6 teaspoons minced canned chipotle chilies
6 15- to 16-ounce cans Great Northern beans, drained

Preheat oven to 350°F. Cook bacon in large skillet over medium heat until crisp. Transfer to paper towels and drain. Transfer 2 1/2 tablespoons bacon drippings from skillet to large bowl. Finely chop bacon; add to bowl. Add onion and next 7 ingredients to bowl and whisk to blend. Whisk in 4 to 6 teaspoons chipotle chilies, depending on spiciness desired. Stir in beans. Transfer bean mixture to 13 x 9 x 2-inch glass baking dish. Bake uncovered until liquid bubbles and thickens slightly, about 1 hour. Cool 10 minutes.

Serves 8 to 10

Emily Cat and Kathy would you PLEASE post those recipes for me, I would really appreciate it!

Buddie, could you please tell me how you edited when you posted twice. I posted twice last night to another thread and tried to figure out how to fix it with no luck! I have no idea how to edit once I have pushed the magic POST REPLY button.

Thanks

Terri-Lynn -
Take a look at the little icons that appear on your posting up near the time/date.

There's a little icon with a pad of paper and pencil -- that's the EDIT option. Click on it and it should bring up your post for you to edit.

It's probably important to note that you can only edit your own postings http://www.cookinglight.com/bbs/wink.gif

Karen's Baked Beans

Recipe By :
Serving Size : 1 Preparation Time :0:00
Categories : Beans

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------

1 pound great northern beans
1/3 cup molasses
1/3 cup brown sugar
1 teaspoon salt
1/2 teaspoon pepper -- of more if desired
1/3 cup catsup
1 teaspoon dry mustard
1/2 pound bacon
1 medium onion -- chopped

Soak beans in cold water--enough to cover--at least 6 hours or overnight. After soaking, add 1 teaspoon soda, bring to boil and boil gently for 20-25 minutes, skimming off foam if necessary. Drain, reserving liquid. Place beans in oven-proof casserole or Dutch oven. Mix in remaining ingredients. Add reserved water to cover. Bake covered at 300º for 5 hours. Add more water during baking if they appear to be drying out.

Servings : 6-8

NOTES : I usually double this recipe because they're even better the next day.

They actually had the nerve to put this under vegetables!!!

Baked Beans

6 slices bacon
1/2 cup finely chopped onion
3 (16 oz) cans beans(pork and beans, butter, kidney, whatever combo you like)
10 oz. sharp cheddar, cubed
1 cup ketchup
3/4 cup brown sugar
1 T Worcestchire sauce

Fry bacon; remove and drain on paper towels. Saute onion in bacon fat; crumble bacon and add to onion. Drain beans in collander; mix with bacon and onion. Add cheese. Mix ketchup, brown sugar, and Worcestershire sauce; add to bacon/onion mixture. Put in log greased casserole and bake at 325 for 1 1/2 hours.

Enjoy!!!

***I drain the onions after sauteeing the onions; I don't miss the extra fat.

I can second "buddie's" recipe. It came from Bon Apetit about a year ago and I have made it several times. It can easily be halved. I love the chipoltes but you can omit or decrease them.

Had to share this wonderful Baked Bean recipe that my family loves. I used freshly ground coffee in it, which no one recognized.

2 tablespoons of veg.oil
2 1/2 cups of onion
1 1/2 cups red bell pepper and same of green bell pepper
1 28 oz can of tomatoes in juices
2 15 oz cans of kidney beans rinsed and drained
2 8oz cans of tomato sauce
1/2 cup of molasses
1/2 cup mesquite barbecue sauce
1 tablespoon hot pepper sauce
2 tablespoon freshly ground coffee
1 tablespoon of fresh oregano
1 teaspoon of fresh thyme
5 tablespoons of fresh basil

Heat oil in heavy large pot over medium high heat. Add onions and peppers
saute until tender. Add tomatoes with their juices and next 8 ingredients.
Reduce heat to medium low simmer uncovered until mixture thickens slightly
and flavors blend about 30 minutes. Stir in basil season with salt and
pepper to taste serve.

I did not add the basil and I used dried oregano and thyme.
The barbecue sauce I used is Jardins Mesquite, it is very peppery so you do not need to add extra salt and pepper. I also cook mine longer than the 30 minutes the
recipe recommends.

Grace - I tried your recipe last night and they were sooo good - I had all the ingredients and they seemed one of the easier - I was going to put bacon in but mine had gone bad so just put them in the oven -oh added a little ketchup and left them for about 2 hours - they were just perfect and so easy - thanks

Terri-Lynn,

These are the ingredients for the baked beans:

1 can pork and beans (we always use Hunts)
2 T. prepared mustard
1/4 c. catsup.
1/4 c. packed brown sugar
2 t. Wostershire sauce
ground black pepper, to taste
1/2 onion, chopped

She said these ingredients are just estimates, though, as she usually just throws everything in.
Saute the onion in a little vegetable oil(the original recipe calls for bacon fat)
in a large, deep skillet until golden. Add the remaining ingredients and cook, over medium heat, for about 20 minutes, or until thickened.
I hope this is specific enough; any questions, just ask! http://www.cookinglight.com/bbs/smile.gif

LenaS - I'm so glad you liked them. I love them too. As I said, they were something my Grandma made me, and one day I asked her for the recipe - and I couldn't believe it was as easy as it is. It seemed like it would be so much harder. But anyhow, sometimes simple is the way to go! Thanks for letting me know you tried them!

The best baked beans I have ever eaten had CUMIN in them!! I don't know the recipe, but it was a wonderful addition. Of course, I love SW & Mexican food. You may try adding it to one of these recipes, especially the one most similar to this type of seasoning... the Hot & Smoky one??

Food for thought! http://www.cookinglight.com/bbs/wink.gif
