Just out of curiousity. What is everyones favorite spice. For me it goes with the months. Right now it is cinnamon a couple of months ago it was celery seed.

For baking, I love cloves...my aunt used to make a plum cake that tasted very distinctly of them, and I remember loving it even when I was only about 10. Now, since I rarely bake, I think that's hardly relevant...I LOVE using fresh rosemary(well, that's an herb, so does it count?), ginger and thyme in my cooking. I'm also a big fan of curry. Gosh, you asked for a favorite...sorry, I love herbs and spices so much, I just couldn't bear to leave some out! http://www.cookinglight.com/bbs/smile.gif

Definately, cinnamon, cloves, nutmeg, all of which remind me of the holidays. I am definately one of those people who puts a variety of spices in a pot on the stove on wintery days just to make me feel good.

I definitely go in phases. A few months ago I bought some really good dalmation sage and found myself putting it in everything. Now it's chili powder. I've been completely sucked in by the smoky/spicy qualities of it. I can't forget oregano, or fresh basil. I have to agree that cinnamon, allspice, and nutmeg are among my favorite spices http://www.cookinglight.com/bbs/biggrin.gif - but my husband would disagree completely - can't stand the smell of cinnamon! I think there must be something wrong with him (hehehe!)

I just bought some Vietnamese Cinnamon, the smell is heavenly and the taste does not compare with the regulars, so for today my vote goes to cinnamon.

But if we are talking about Indian or Mexican food, I just can not get enough cumin!
