Anyone have a great macadamia nut cookie recipe?? I want to make some for my hubby- no chocolate (white included) and no coconut! Thanks in advance!

i don't have a recipe per say but you can chop the macademia nuts and put them in oatmeal cookies, with or without raisens. You can also make the chocolate chip cookie recipe, and leave out the bits and put in the nuts. Blonde brownies would be good also, since there is no chocolate in them. You can make meringues and place a nut in each cookie.

COCONUT-MACADAMIA NUT COOKIES

1 Cup Unbleached flour
1 Cup Regular oats
1 Cup Brown Sugar -- Packed
1/3 Cup Golden Raisins
1/3 Cup Coconut -- Flaked/sweetened
1/4 Cup Macadamia nuts -- Chopped
1/2 Teaspoon Baking Soda
1/4 Cup Butter -- Melted
3 Tablespoons Water
2 Tablespoons Honey
Cooking Spray

Preheat oven to 325° (300° convection)

Combine flour and the next 6 ingredients (flour thru baking soda). Combine butter, water and honey, stirring well to combine. Add butter mixture to flour mixture, stirring until well-blended. Drop by level tablespoons 2 inches apart onto baking sheets coated with cooking spray. Bake at 325° (300° convection) for 10 minutes or until almost set. Cool on pan 2 - 3 minutes or until firm. Remove cookies from pan, and cool on wire racks.

Yield:
"2 1/2 Dozen"

NOTES : Could probably use other nuts instead of Macadamia.

RÖCKENWAGNER'S ESPRESSO-MACADAMIA NUT COOKIES

2 Ounces Unsweetened Chocolate -- Coarsely chopped
1 1/2 Cups Semi-sweet Chocolate Chips
1/4 Cup Butter
1/4 Cup Unbleached flour
1/4 Teaspoon Baking Powder
1/4 Teaspoon Salt
2 Whole Eggs
3/4 Cup Sugar
3/4 Tablespoon Instant Espresso Powder
1 Teaspoon Vanilla
25 Macadamia nuts (or Almonds or other Nuts)

Melt unsweetened chocolate, and 3/4 cups chocolate chips and butter in top of double boiler set over, but not touching, simmering water. Stir occasionally until mixture is smooth and completely blended. Set aside to cool to room temperature.

Sift together flour, baking powder and salt in medium mixing bowl. Set aside.

Combine eggs, sugar, espresso powder and vanilla in large mixing bowl and beat at medium speed until mixture holds a ribbon when beater is lifted away, about 4 minutes. Fold in cooled chocolate mixture. Sift half flour mixture over top and fold it in gently.

Repeat with remaining flour mixture. Fold in remaining chocolate chips and macadamia nuts. Cover batter and chill in refrigerator 30 minutes.

Grease and flour 1 large baking sheet. For each cookie, spoon about 1 teaspoon batter (2 Tbsp in recipe) onto baking sheets, placing cookies at least 1 inch apart and making sure nuts are evenly distributed.

Bake at 400° (375° convection) until cookies are puffy and shiny, 7-10 minutes (or less for smaller cookies) Cool on wire rack.

Yield:
"50 Cookies"

NOTES : This recipe has been cut in half. The original size of the cookie was 2 Tablespoons per cookie. I will substitute the Macadamia nuts with other nuts, unless I have a huge crop this year! The original recipe made 25 cookies.
