I finally broke down and purchased the Complete Cooking Light Cookbook, mainly because of all the terrific reviews I saw about it on this BB. I have been cooking from it the past two weeks and thought I would share my reviews of the recipes I have tried.

Beef and Broccoli with Oyster Sauce - I have tried many different recipes for Beef Broccoli over the years and I have to say this one will become one of my favorites. The sauce is delicious and the meat came out very tender.

Chicken Parmigiana - This was a very easy and good recipe. It went together in no time and we all liked it. I will make this again.

Marinated Orange and Strawberry Salad - Another good recipe. At first I was concerned that there would not be enough dressing for it, but while it marinated, the fruit juices from the oranges and strawberries mingled with the dressing and there was plenty. The cinnamon added a nice flavor. A repeater in my house.

Rosemary Chicken with Two Corn Polenta - This was not a favorite. There was just too much rosemary flavor on the chicken, though the polenta did help to mellow out the overall flavor of the dish. Will not make again.

Creamy Chicken and Rice Casserole - Very easy to make and delicious. A real comfort food for the autumn and winter. It disappeared at our house the first night! I used the precooked rotissere chicken breasts because I had them in the freezer. I also used a regular package of Rice Pilaf Rice-a-Roni because that's what I had in the cupboard. A great make-ahead dinner.

Marinated Tomato-Basil Salad - We still have tomatoes and basil in the garden so I decided to make this instead of my usual recipe for marinated tomatoes. It was wonderful! I added some shredded mozzarella cheese to the salad. Will definately make it again.

Honey Apple Glazed Cornish Hens - We were a little disappointed in this recipe. The "glaze" was very runny and didn't cling to the hens. I basted them faithfully but the flavor was subtle and almost nonexistent. My husband thought I had just baked the cornish hens plain! If I made this again I would probably use more honey or try to thicken the glaze in another way. Maybe marinate the hens ahead of time to get more flavor???

Wild Rice Apple Pilaf - I served this with the cornish hens. You actually are supposed to make the pilaf and then bake each hen half on top of a mound of the rice. The pilaf was excellent. It actually complemented the subtle hen glaze and made the dinner much more interesting tasting. I will make this pilaf again.

Grilled Salmon with Ginger-Orange Mustard Glaze - This was delicious. Quite simple to make also. A definate repeater.

Greek Salad with Feta and Olives - Another great CL salad. The oregano vinaigrette that is part of the recipe was very good and could be used with other salads. (I think someone else already reported favorably on this dressing).

Mixed Greens with Pears and Raspberries - I made this salad when it first came out in 1995 and loved. I remade it recently and still love it. Confession: I am partial to green salads that have fresh fruit in them so of course I would like this one too! http://www.cookinglight.com/bbs/biggrin.gif

Rosemary-Crusted Rack of Lamb with Balsamic Sauce - My husband requested rack of lamb for his birthday dinner. Instead of making my "usual" favorite, I decided to be daring and try this new one. It was great! We all loved the balsamic sauce. I will add it to my rack of lamb recipe collection.

Roasted Garlic Potatoes - I served these with the rack of lamb. The were OK but nothing fantastic. They were in need of some herbs. I added some chopped parsley from the garden for color but it was not enough. I have several oven roasted potato recipes that are much better, so I won't make this one again.

Well, that's the rap-up of my latest culinary experiments! Overall, I am very pleased with the Complete CL Cookbook. One reason I was hesitant to buy it was because I have the last four CL Annual Recipe Cookbooks and I was concerned about too much duplication. That does not appear to be a problem.

I'll be looking forward to seeing additional reviews on recipes from this new cookbook.

Peggy, thanks for the update. I just got mine in the mail on Tuesday and can't wait to put it to good use! We're moving into our new house this weekend and as soon as we're settled, I'll be breaking in my new kitchen! Keep us posted if you try more.

Thank you for all those reviews, I will definitely try the Beef and Broccoli. Its been awhile since I've made a lot from there, but I can add a few reviews of my own!
Last week, I made the Indonesian Meatballs with Peanut Sauce. Very interesting, and it made great leftovers for my fiance and I. It was also easy; a good weeknight meal.
Another recipe I liked was the Polenta with Shiitake Mushroom Sauce. To cut the time, just buy the prepackaged polenta. And the sauce was delicious! However, it isn't very filling, so I would suggest having a salad, some bread, and a little dessert to round it out.
Stuffed Chicken with Gouda and Apples- good fall dish; had a little trouble getting the cheese to stay in the chicken, but I did like the sauce.
Hmmm, I've made so many, and its been awhile, but those are my top picks!
Oh, and the Filet Mignon with Shiitake Mushroom sauce was out of this world.

I don't have the book yet but I wanted to tell you that I always look forward to your reviews. You seem to try alot of CL recipes and it inspires me to cook more (I'm a novice!). I look forward to your Cl Nov 00 reviews! Thanks!

Thanks for your review Peggy! My sister bought me a copy back in September for my birthday (in a couple of weeks) and told me because she didn't want me to buy it myself as I am notorious for! http://www.cookinglight.com/bbs/biggrin.gif

Of course, now she won't let me have it until my birthday http://www.cookinglight.com/bbs/tongue.gif so I have to rely on CL 2000 until then. Now I have some idea as to what I have to look forward to!! http://www.cookinglight.com/bbs/wink.gif

Its funny you mentioned that. I actually bought the book for a friend, intending on putting it away for a Christmas gift. I thought I was so smart until she went shopping for a CL cookbook and of course bought that very one. Well, I really like it so don't mind that I will have to keep it for myself.

Actually, our supper club made the Chicken with Mole sauce. Oh boy, was that delicious. I am looking forward to making that one again.

I love having these reviews. It sure does cut down the choices we have to make. I made the herbed meat loaf with sun-dried tomato gravy. It was good, but not a repeat. Really not worth the extra effort.

pmmahan - I must thank you for your recommendation on the Indonesian Meatballs with Peanut Sauce. I was tired Friday night after work and feeling very uninspired about what to make for dinner. I saw your post and that recipe sounded so interesting, I decided to try it. Deeeelicious!! Especially when served on the Basmati Rice. I will definately make that one again and I probably never would have tried it if I hadn't seen your post.

I also make the Spinach-Strawberry Salad that evening. As much as I like fresh fruit in salads, I thought this one was rather unexciting. Not a repeater for me.

We made the Asiago Dip with Crostini at my Supper Club this weekend (also from the CL Complete Cookbook). Everyone has been raving about this one on the BB so we gave it a try. It was as good as everyone says! Yummy!

CrystalB - Thank you for your kind words. I enjoy everyone else's reviews so I try to post my contributions whenever I can. I'm glad you find them helpful.

Peg Levy - I had been eyeing the Herbed Meatloaf with Sundried Tomato Gravy recipe...I will now have to reconsider making it. Thanks for the opinion...

Made the Greek Stuffed Steak - It was pretty good. I made two - as we had a big group.

The recipe calls for the steak to be cut/split horizontally without going through. I managed to do this on one - but the second - I cut a few holes through - so that one I just flattened out and rolled - and hoped for the best! It actually was the better of the two! I also added a little feta cheese to the spinach mixture in one - it added a lot of flavor. The recipe called for the cooking liquid to be used as a gravy - it tasted good -but it was a little too broth like. I probably should have added a little flour to thicken. Maybe, I'll try that next time - after I try the hundred or so other recipes from this book that look good!

I have made several recipes from this cookbook and they are all great.
If you love German Chocolate Cake, definitely try the recepe in the Complete CL Cookbook. I made it for my mom's birthday this weekend and it is fabulous!!!! (I'm not even a big fan of german chocolate.)

While my husband is glued to the election results I wanted to share my further adventures with my new Complete Cooking Light Cookbook:

Cheesy Beef and Rice Casserole - Very good. Easy to make. A definate comfort food. My daughter loves this one.

Pork Saute with Peanut Sauce - We also enjoyed this recipe. The sauce came out a little thick so I had to thin it down a bit but the flavors were good. A repeater.

Blueberry Yogurt Muffins - I am not a big baker so I don't have a lot to compare this recipe to, but we did like these muffins.

Oven-Finger Chicken Fingers with Honey Mustard Sauce - I only made this because I had accidentally bought chicken tenders instead of chicken breasts and I wanted to use them. As it turned out, they were very good. What a delicious and healthy alternative to the deep-fried chicken fingers they serve at fast food restaurants. My daughter loved these and I felt OK eating them too. The seasoning was good and they came out very moist. If you have kids, these will be a winner.

Spinach Salad with Beets and Oranges - We loved this salad. The raspberry vinegar compliments the beets, oranges, and walnuts. I will add this to my long list of fruit/green salad recipes.

Roasted Tomato and Red Pepper Soup - I happened to notice that this recipe is also in the November 2000 issue. We had it for dinner tonight and it was a hit. I was able to use tomatoes from our garden which is always a plus, http://www.cookinglight.com/bbs/smile.gif. I did reduce the amount of black pepper to about 3/4 of a teaspoon because we don't like things too spicy. It was delicious. I made the Sun Dried Tomato Biscuits (Nov '00) to go with it.

Paprikash Chicken - I chose this recipe because I had leftover tomato paste and sour cream in the refrigerator and green bell peppers in the garden I needed to use. I am not a big fan of microwaving chicken, (it frequently comes out too dry for my tastes) so I sauted the entire recipe. I would give it an average rating...very similar to many other chicken recipes out there. However, my husband thought it was wonderful. Go figure... I may make it again because he liked it so much.

Gorgonzola Cheese Grits - I already posted my opinion of this recipe on another post but thought I should mention it here. They came out VERY runny and I had to serve them in ramekins. Though my husband managed to eat his helping he stated that I shouldn't save the leftovers because he would "never eat those again". The remainder was given to the garbage disposal... Yuck! My first bite was "interesting". After finishing my little bowl I had to agree with him! http://www.cookinglight.com/bbs/frown.gif

Those are my latest reviews. Overall, I do love this cookbook. Have only had a few failures so far. Tomorrow night I am trying the Double Cheese Meat Loaf...

I tried the chicken fingers and love them! the dipping sauce was great.
I've been looking for a good muffin recipe, so I'll have to try the Blueberry Yogurt muffins. I am going to bring in some to work on Monday.

You have to try the Malasian chicken pizza. It is so good I make it at least once a week. If you like spicy peanut sauce, the sauce on this pizza is to die for!!!! I've also just made the sauce and used it for a warm chicken salad. It is addictive though, so beware.
