Old-Fashioned Gingerbread
Serve this gingerbread with a warm lemon or vanilla sauce
2 1/2 cup all-purpose flour
2 teaspoon baking soda
2 teaspoon ground ginger
1 1/2 teaspoon cinnamon
1/2 teaspoon salt
1 large egg
1/2 cup dark brown sugar, packed
1/4 cup canola oil
1 cup molasses
1/2 cup applesauce
1/2 cup buttermilk

1. Preheat oven to 350 degrees F. Lightly oil an 8-by-11-1/2-inch baking pan per 12 servings or coat it with nonstick spray.

2. In a bowl, whisk flour, baking soda, ginger, cinnamon and salt. Set aside.

3. In a large bowl, beat egg, sugar and oil with an electric mixer at high speed until thick and creamy. Reduce speed to low and beat in molasses and applesauce.

4. With a rubber spatula, gently mix reserved dry ingredients and buttermilk into egg mixture, making 3 additions of dry ingredients and 2 additions of buttermilk. (Do not overmix.)

5. Scrape batter into prepared pan. Bake for 40 minutes, or until a skewer inserted in the center comes out clean. Let cool slightly in the pan on a wire rack. Serve warm.
