I bought all the ingredients for this except the quinoa because I had some in the pantry at home. So I get home and guess what...no quinoa! My question is, do you think pearled barley would work as a substitution or should I run out and get some quinoa? I'm torn. I know I like quinoa a lot, but I don't know if it is worth a extra trip. Do you think pearled barley would be to mushy? I also could use brown rice, but then I worry it would be too bland. Aaarg, I hate faulty memories.
