View Full Version : Sweet potato and black bean burrito question

I'd like to try this recipe, based on the great reviews it's gotten on this board, but I'm wondering what the consistency of the filling is like after it's been pureed. Doesn't it get kind of gummy? Has anyone tried this recipe without pureeing the filling? If so, how did it turn out?

This is one of my favorite recipes!! After pureeing, the consistency is very much like that of refried beans. I guess you could skip the pureeing, but I can't really imagine that. Mainly because I think it would be harder to eat. Really though, I guess it wouldn't taste much different, because its still the same ingredients, you just wouldn't get a consistent mixture in every bite.

If you try it w/out the pureeing, let me know how it turned out!

We froze several of them, after baking, in plastic bags and reheated them in the microwave. They turned out great.

I'm not sure which recipe you're referring to, but mine (based on Moosewood, I think) doesn't puree...it just cooks the beans and the sweet potatoes separately and I add some cider vinegar and a little honey in the potatoes once they're cooked and drained.

YUMMM!!!
