I am just curious and being new here - how on earth do you all cook like this and try to remain slim or could you be like me - just a tad overweight - I love to cook - but if I cooked the way I see things here I would be an elephant (and that may not be far away) http://www.cookinglight.com/bbs/frown.gif

Most CL recipes are nutritionally balanced very well, and because they're also delicious, you don't need to eat as much to feel satisfied (at least theoretically http://www.cookinglight.com/bbs/wink.gif ). Granted, sometimes staying slim takes a little will-power; i.e., not scarfing down the entire dish when you think the serving sizes are ludicrously small, you can always alter things to your preferences. Maybe give yourself 1 1/2 servings and just adjust the nutritional information. Cooking deliciously doesn't have to be fattening.

I also am slightly overweight (14 lbs) and I use Weight Watchers points system to help with my portion size.

I'm also on WW and make CL recipes all the time. (I have been losing weight the whole time.)

Make sure you watch your portions.(If the recipe says it makes 4 servings I eat a fourth of it.) If they seem small then add a salad with fat free dressing or some vegetables to help fill you up.

I have a harder time saying no to the desserts so I usually make fewer of those recipes, or make them for a special occasion when there are more people around.

I lost 35 pds. using a fat restricted diet (The New Hilton Head Diet by Dr. Peter Miller) combined with CL recipes. I just chose the recipes that were lower in fat; and believe me there are a lot of them.
I also found it helpful to cut the recipes down to the portion size I wanted (as in there's only 2 of us here). I find that if I made the entire 4 servings they mysteriously disappeared :-)
And I have a tough time resisting the desserts so I make ones that I'm not really fussy on (still good, but not as tempting); unless we're having company and then I make something sinful and make them take the leftovers home with them (much to the chagrin of my partner).

Forgive me, veterans of the board, for being repetitious, as I know I've mentioned this before on a few occasions:

I can't recommend small baking pans enough. I have a 4-inch springform that I use to make small cheesecakes that are just perfect for 2 people - it yields a few small slices. We love cheesecake, but it's not something we want to eat every day! You can also get muffin pans for 6 muffins, small loaf pans, and so on. If you love baking but can't possibly eat everything, it's a great option (well, so is sharing food with your co-workers http://www.cookinglight.com/bbs/wink.gif ). I sometimes feel guilty firing up the oven for such a small dessert, but all things considered it works well for us. Also, sometimes I can plan to make something else that uses the oven either before or after the dessert.

I also halve a lot of other recipes, but mostly desserts.
