View Full Version : HELP! quick i need substitutions

i am in the middle of making the pork chops w/ creamy porchini mushroom sauce (nov 2000) and i am out of sage - what would be a good substitute?
also, the recipe calls for boned pork chops, but i have boneless - does anyone know how that will change the cooking time? the recipe calls for cooking 1 1/2 hrs - but i think that w/out the bone they should cook faster.

last question - i made the asparagus bundles from the make ahead supplement, but i ran out of tarragon too - any ideas for substitutions?

as you can see, i didn't make a very good grocery list...

Mastercook says thyme for sage but notheing for tarragon.

Do you have any poultry seasoning? That contains sage and would be a good substitute. If not, dried thyme is great with mushrooms and with pork chops. Dried thyme leaves would be great with the asparagus bundles. I don't have recipe for chops at work, but generally boned means boneless. Thickness will influence cooking times too.

thanks so much guys! i ran to the little store up the street to get sage - and i will try thyme w/ the asparagus.

cathie - i always get boneless just because i don't like eating a bone - so it is good to know that boned and boneless mean the same thing - learn something new every day! thanks again!

i'll let everyone know how the pork chops and asparagus are.
