I made these for dinner last night. The Mushroom Cannelloni is from the new make it ahead supplement. It was fantastic! The mushroom mixture I used was crimini, shiitake, oyster, and portobella. It was very flavorful mixed with the shallots, green onions, and roasted peppers. The basil Alfredo sauce was wonderful as well. I definitely recommend this and will make it again. Extremely tasty.
I also made the Maple Walnut Crisp. The store didn't have Rome apples, so I used Granny Smith. They held up well, even after baking for 45 minutes. There was not too much liquid, as some of th other crisp recipes have been. I really liked the falvors, and I really forgot that it was low fat.

Thanks for your review! I wasn't planning to buy the make ahead supplement, but I LOVE mushrooms, especially wild ones, and this dish sounds too irresistable to resist! I may go out and buy it today. http://www.cookinglight.com/bbs/smile.gif

here is another vote for this dish. i made this yesterday afternoon and then popped it in the oven when we were ready to eat - it was fantastic!! my husband and i both loved it. we expected it to be a little on the heavy side because of the alfredo sauce, but it wasn't at all - very light. and so easy to make. definitely a keeper!
i used shiitake, woodear, oyster, & crimini mushrooms. the roasted red peppers added such great flavor. can't wait to have the leftovers tonight http://www.cookinglight.com/bbs/smile.gif.

For all of you who made the canneloni, what brand of Alfredo sauce did you use? My SO would love this dish, (and so would I http://www.cookinglight.com/bbs/wink.gif ) but I don't want to screw it up with a bad sauce. Also, Jen, did you find fresh woodears? Thanks, all!

emilycat - i did find fresh woodear mushrooms - i have been wanting to cook with them for a while, so i was excited to see them fresh this week. i used an alfredo sauce that my grocery store just started carrying. it is called francesco rinaldi alfredo sauce & it is much lower in fat than the others (classico, five brothers, prego, etc). it has only 4g of fat compared to the others that range from 11-13g in 1/4 cup serving. i want to compare the sodium of the others when i get to the store this week because the francesco rinaldi tasted a little salty for us - it was very good other than that - i just used a little less sauce than the recipe called for.
i have also used the classico before, which tasted fine, but much higher in fat.

I used the contadina light alfredo sauce that you find in the store with all the fresh pasta.

I can't wait to make this one again!

I love mushrooms and your reviews sound great.
I'm still having a problem finding the "Make it Ahead Supplement"

Sorry to be the naysayer here, but I made this for dinner tonight (spent quite a bit on those mushrooms!), and was kind of disappointed. I guess maybe with all the hype about this dish that I read here on the board, my expectations were too high, but it wasn't a winner for us. Maybe it's that I'm just not a huge fan of a lot of cream sauce, I don't know. They were ok, I didn't throw them out or anything, and my husband was not at all enthused about them either, but you could tell he was trying to spare my feelings by saying "they're "OK", I guess". For that much money and effort, I want more than "just Ok"!!! Anyhow, it wasn't a repeater, although I was glad to be eating the mushrooms, because they are very good for you (they build your immune system, according to Dr. Weil!).
