Took your advise (and most of your menu) and had the Lime Grilled Chicken with Black Bean Sauce. It was great. The sauce ingredients sounded a little strange to me (orange juice and beans), but it was delicious. The only thing I did different was to put the onion and red bell pepper into the sauce ingredients and didn't pre-cook them. With it we had your suggested recipe for the Grilled Marinated Vegetables and because of our lovely fresh tomatoes in the garden, Pasta with Fresh Tomatoes also from CL Complete. Great dinner-thanks to you!!!

Lime Grilled Chicken with Black Bean Sauce

3 tablespoons fresh lime juice
2 tablespoons vegetable oil
1/4 teaspoon ground red pepper
4 cloves garlic, crushed
4 (4 ounce) skinned and boned chicken breast halves
cooking spray
2 cups water
1/2 cup diced red bell pepper
1 tablespoon chopped red onion
1 cup drained canned black beans
1/2 cup orange juice
2 tablespoons balsamic vinegar
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 cloves garlic, crushed
Combine the first 4 ingredients in a large zip-top plastic bag; add
chicken. Seal and marinate in refrigerator 8 hours, turning bag
occasionally.
Prepare grill.
Remove chicken from bag, reserving marinade. Place chicken on grill rack
coated with cooking spray; grill 10 minutes on each side or until done,
basting with reserved marinade. Keep warm.
Bring water to a boil in a small saucepan; add bell pepper and onion.
Cook 30 seconds; drain. Plunge into ice water; drain well.
Place beans and next 5 ingredients in a food processor; process until
smooth. Pour bean mixture into a saucepan; cook over medium heat until
thoroughly heated.
Spoom 5 tablespoons bean sauce onto each of 4 serving plates. Place 1
chicken breast half on top of sauce; top each with 2 tablespoons bell
pepper mixture. Garnish with cilantro sprigs, if desired.
Yield: 4 servings. 278 cal, 9.1g fat,31.1g pro, 17.6g carb, 2.4g fiber,
72mg chol, 2.2mg iron, 335mg sod, 39mg calc.
