Leftover Pork Roast...Panini?

Hi everyone!

I made a wonderful garlic studed, mustard glazed pork roast a couple days ago and was wondering if you think the leftovers might work for paninies?

What all would be good on the panini? Cheese? Mustard? Pickles? What else?

Roasted red peppers and roasted or caramelized onions. Capers? Yum.
