Hi Stacy. Found my enchilada recipe after a diligent search - it's actually "Tortilla Chicken Casserole" from June 1999 page 172. This actually tastes like an enchilada and I think could be made into those instead of a casserole. The sauce is especially good and similar to what my mother in law made - and she was an immigrant to San Antonio. Thanks for the help. Enjoyed the online enchilada article. Try this one if you havent - its terrific!
