I previously posted that the recipe search engine was broken but I didn't wait long enough for the page to load...
I still can't find Chicken `a la King, if anyone knows where it is on the site or if any members have a copy, please post.

1/2 cup butter
1/2 cup all-purpose flour
2 cups chicken broth
3/4 cup light cream
2 egg yolks -- beaten
1/2 cup pimientos
1 cup mushrooms -- sliced
1/4 cup green peppers -- chopped & blanched
3 cups cooked chicken -- diced
2 tablespoons sherry
salt
black pepper
paprika
Melt butter in top of double boiler. Add flour and cook one minute. Add chicken broth and cream. Bring to a boil. Set over hot water and cook for 15 minutes. Remove from heat and add beaten egg yolks, pimento, mushrooms, green peppers, and chicken. Season with sherry, salt, pepper, and paprika to taste.

Chicken a la King

1/2 green bell pepper -- chopped
1/2 red bell pepper -- chopped
6 ounces mushrooms -- sliced
1 tablespoon butter -- or cooking spray
2 tablespoons chicken fat -- or butter
6 tablespoons flour
2 cups nonfat chicken broth
1 cup skim milk
2 1/2 cups cooked ckicken, chopped
Saute peppera and mushrooms in 1 T butter and set aside. Heat chicken fat in pan until meltded and stir in flour. Gradually add chicken broth, then milk, stirring until thickened. Add chicken, mushrooms and peppers. Salt and pepper to taste. SImmer about 10 minutes. Serve over toast, English muffins or rice.
