I have read many praises of this recipe. Now with strawberries plentiful , I'd like to try it but I ran a search & came up without a recipe. Apparently it was from the May '01 issue. (I have a regrettable habit of giving my old issues to my daughters ).
Can someone help me ? TIA

Spinach-Strawberry Salad with Goat-Cheese Bruschetta
The sweetness of the strawberries and salad dressing contrasts with the garlic bread's pungent goat-cheese flavor.
Published: Cooking Light-04/01/98
INGREDIENTS
1/4 cup sugar
2 tablespoons sherry or white wine vinegar
1-1/2 teaspoons sesame seeds, toasted
1-1/2 teaspoons olive oil
1 teaspoon minced red onion
3/4 teaspoon poppy seeds
1/4 teaspoon Hungarian sweet paprika
1/8 teaspoon salt
6 cups torn spinach (about 1 pound)
2 cups halved strawberries
2 tablespoons slivered almonds, toasted
1 (3-ounce) log goat cheese, cut into 6 slices
6 (1-ounce) slices French bread, toasted
INSTRUCTIONS
Combine the first 8 ingredients in a jar; cover dressing tightly, and shake vigorously.
Combine the spinach and strawberry halves in a large bowl, and toss gently. Pour the dressing over the spinach mixture, tossing gently to coat. Spoon 1 cup salad onto each of 6 plates; sprinkle each serving with 1 teaspoon toasted almonds. Spread cheese over toast slices; top each salad with 1 bruschetta.
YIELD: 6 servings

I got this recipe from a co-worker several years ago. It isn't really light... but it is great! I would imagine the oil in the recipe could probably be reduced, but I haven't experimented with it yet.
Strawberry Spinach Salad
8-10 ounces fresh spinach (cut stems off, wash and drain well)
1 pint strawberries (sliced)
2 ounces sliced almonds
Dressing (put in jar and shake, add to salad just before serving)
1/2 cup sugar
2 T sesame seeds
1 T poppy seeds
1 1/2 tsp lemon juice
1/4 tsp paprika
1/4 cup apple cider vinegar
1/2 cup vegetable oil
Almonds
2 T sugar
2 tsp water
Mix sugar and water on glass plate with almonds to glaze them; microwave on high for 2 minutes - toss- microwave for 1-2 minutes (watch carefully as they burn easily). Let cool on wax paper. Add to salad before serving.

You guys are wonderful !! So fast with help.
I hadn't realized the CL one included bruschetta. That would make it complicated to make as a "take along "( I didn't mention this aim).
But shoyski's recipe would work. I'll have to figure a reduced oil for the dressing.

AnnaSue, try adding a can of mandarin oranges to your salad and replace half of your oil with the drained orange juice. You might want to also cut back on the sugar though, if you try this.

I often just do a simple one of spinach, strawberries, feta and balsamic vinegar.

Ginny, I just dug out my May '01 CL, and found this strawberry-spinach salad recipe:
Spinach-and-Strawberry Salad
2 c whole strawberries
1/3 c champagne vinegar or white wine vinegar
2 tbsp orange juice
2 tsp extra-virgin olive oil
1 1/2 tsp chopped fresh or 1/2 tsp dried thyme
1 tsp sugar
1 tsp Dijon mustard
1/4 tsp salt
1/8 tsp freshly ground black pepper
6 c torn spinach
3/4 c diced fennel buld
2 c quartered strawberries
1/4 c (1 oz) crumbled feta cheese
1. Place first 9 ingredients in a blender or food processor; process until smooth. Place 2 tbsp dressing, spinach, and fennel in a large bowl, and toss gently to coat. Arrange 1 1/4 cups spinach mixture on each of 4 plates, and top each serving with 1/2 cup quartered strawberries and 1 tablespoon feta cheese. Drizzle each serving with 1 1/2 tsp dressing. Yield: 4 servings.

Here's one that a friend of mine shared - it's super easy. It calls for Romaine, but you can substitute spinach.
STRAWBERRY ROMAINE SALAD
2 tablespoons freshly squeezed orange juice
1 tablespoon balsamic or sherry vinegar
1 tablespoon honey
1 1/2 teaspoon olive oil
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1 cup sliced strawberries
5 cups shredded Romaine lettuce
1/2 cup pecans, lightly toasted
Combine first 6 ingredients and whisk together. Combine the lettuce, strawberries and pecans. Toss to coat.

I like cooked fennel, but I understand that raw fennel has a strong licorice flavor - I personally think the recipe would be fine without it. Hope this helps!
