Here's a great chicken & vege stir fry recipe that I made this week. It goes together pretty quickly if you do the vege prep the night before. Thought some of you might be interested in it. Enjoy!

Chicken & Vegetable Stir Fry

Amount Measure Ingredient -- Preparation Method

3 tablespoons balsamic vinegar
3 tablespoons soy sauce
1 tablespoon lemon juice
1 1/4 pounds boneless chicken -- 1 1/2 chunks
2 teaspoons olive oil
2 cloves garlic -- chopped
2 cups broccoli florets
1 cup baby carrots
4 ounces green beans -- cut in half, 1 cup
1 red bell pepper -- thinly sliced
1/2 cup water
3 tablespoons flour

1. Mix vinegar, soy sauce, & lemon juice in a shallow bowl.
2. Add chicken, cover and refrigerate at least 2 hours or overnight.
3. Heat oil in large nonstick skillet; add garlic and sauté until aromatic. Add chicken & brown on all sides.
4. Stir in veges, cover & simmer 15 minutes - stirring once or twice.
5. Whisk water and flour in a small bowl until smooth. Add to skillet; stir to mix & coat. Cook over medium heat 2-3 minutes until sauce thickens.

This looks great; I love to have stir-fry recipes on hand, and since it's not a tofu dish, my mother might eat it, as well! http://www.cookinglight.com/bbs/rolleyes.gif
