This was requested on a thread about toddlers & veggies. I thought others might also be interested, so I'm posting it on a separate thread instead of the other one. It's from the back of a flaxseed bag. It is the best healthy muffin I've ever tasted. The muffins were a huge hit with the toddlers (and moms) at playgroup.
Bran Flax Muffins
1 and 1/2 cups all-purpose flour
3/4 cup ground flaxseed
3/4 cup wheat bran
1 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/4 teaspoon salt
2 teaspoons cinnamon
1 and 1/2 cups shredded carrots
2 medium Granny Smith apples, peeled and shredded
1/2 cup raisins
3/4 cup skim milk
2 large eggs, beaten
1 teaspoon vanilla
Preheat oven to 350. Mix together flour through cinnamon in a large bowl. Stir in carrots, apples, and raisins. Combine milk, beaten eggs and vanilla. Pour the milk mixture into the flour mixture. Stir until just moistened. Do not overmix. Fill 12 muffins tins. Bake 15-20 minutes.
