Every Tuesday our local HF store has a cooking demo. I try and go when I am not working! Here is the falafel recipe the chef made a couple of weeks ago.
Falafel patties
! onion,chopped
1 yellow pepper, chopped
2 Tbsp. garlic, mashed
1 Tbsp. olive oil
1 tsp coriander
1 tsp. tumeric
1 pinch cayenne pepper
1/2tsp.sea salt
1 package firm silken tofu
1 Tbsp. tamari
1 can (19 oz.) chick peas
1 Tbsp. toasted sesame oil
1/4 bunch parsley
1/4c. seame tahini
3 Tbsp. lemon juice
1/2c. dry bread crumbs
Saute the onion, peppers,garlic and add the spices,cook until tender and set aside to cool.
In a food processor place the rest of the ingredients except the bread crumbs and blend until smooth.
Fold all of the ingredients together until well blended.
Scoop the dough onto a parchment covered baking sheet and form patties with your hands slightly damp with water.
Bake in a preheated 350 deg. oven for 30 minutes or until done, flipping them over half way through the baking time.
Tzatziki Dip
500ml. plain yogurt, strained for an hour
2 Tbsp. minced garlic
1/4 Long English Cucumber, grated and squeezed
1/2 tsp. salt
Mix well and refrigerate
I serve the patties in Pita and put out a plate of sliced veggies to add-tomatoes, onions peppers etc.
