Our stand-by recipe is pretty basic:

Chili con Queso

2 lb box of Velveeta
1 (10oz) can Rotel tomatoes (or any other tomatoes with chilies)
1 (15oz) can refried beans
1 can beer

Heat beer in large pan. Add the remaining ingedients except for cheese; heat thoroughly. Cube the cheese into two inch pieces and add to the pan stirring until melted. You can use the light Velveeta, fat-free refried beans and light beer. I have on occasion used no-bean chili instead of the refried beans.

What are Rotel tomatoes? I have never seen them here - is it a brand or a kind of tomato? Would love to know - I see so many recipes with that as an ingredient? Thanks - Lanie

Does anyone out there in Cooking Light land have a recipe for con queso? My husband loves it & wants me to make some around the holidays. He likes both cheese and chili. I really appreciate your help. I know this is not a "light" recipe, but I want to keep my husband smiling http://www.cookinglight.com/bbs/smile.gif

Thanks in advance
