View Full Version : Salmon...cooking with skin?

I'm trying to learn to like fish and purchased a small, fresh, filet of salmon today. It came with the skin on one side. :confused:
My question is do I grill it with the skin on or trim the skin off before grilling? Oh, and what do I use to get the skin off?

I would cook it with the skin on. When it's done, it should just lift up off the skin pretty easily. You can just use your fork or a spatula and lift the meat off the skin.
Mmmm, I love salmon. What are you going to do with it?

Thanks for the reply. I'm actually going to try and go "natural" and just use a bit of olive oil, salt and pepper. When I have more time I have some recipes marked to try. :)
I grill or cook with the skin - and I eat the skin too, if its been grilled. Its great for a sushi B.C. Roll.

The skin on the salmon is yummy. :) Just like chicken, though, the layer of fat is right underneath it. Leave it on for cooking, and if you want to lighten it up a bit, just don't eat the skin.

If you're learning to "like" fish, I applaud you for trying salmon. To me, it's pretty strong. I started with haddock and flounder and graduated up.
To cook salmon easily sans skin, do NOT spray a piece of foil and put skin side down. When it's done, you can easily slide the fish off and the skin will stick to the foil. Wahla!

Ooooo...fresh salmon! My favorite! :D :D :D Just the other night we had fresh coho, grilled whole (sans head and tail). Yuuuuummmmm!
Another way to cook salmon with the skin on is to prep it as you desire (I love dried chili rubs on mine!), oil and heat a grill, place fillet fillet side down and sear it briefly (2 minutes or so) then flip and continue to cook skin side down. Roughly 10 minutes or so...it really depends upon your grill!
When you remove the fillet from the grill, just slide the spatula between the skin and the fillet and it should come apart that easily! Or you can remove the whole fillet and once inside, slip a spatula between the skin and fillet and remove the fillet.

Luv2cook, in the past few years I've tried tuna steak, mahi mahi and some sea bass. I've enjoyed them all so thought I should tackle the salmon, especially since it's so good for you!
Now the only part I have to recover from is the price! :eek:
So glad you liked the salmon -- we eat it at least once a week.
BTW -- if you ever want to try cooking it without the skin (for a recipe like CL's cumin-dusted salmon, for example), your best bet is to ask the person at the fish counter to do it for you. (I think we talked about this on another thread recently.) A good "fish guy/gal" will be able to do it in jiffy.

Any salmon sashimi fans out there who like their salmon unmolested by heat? :D I also love it as lox and gravlax. Oh boy! Not even 9 in the morning and I'm getting hungry thinking about this...

All of the above!! :D But also grilled or broiled. Just about any way but poached....
