i am dying to make gingerbread man cookies. i have my gingerbread man cookie cutter but now i need the recipe.
i would love a chewy recipe. i prefer thicker over thinner cookies and chewy!

Patti Paige's Gingerbread Cookie

Amount Measure Ingredient -- Preparation Method

1/2 cup light brown sugar -- firmly packed
1 teaspoon ground ginger
10 1/2 tablespoons unsalted butter
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1 1/2 teaspoons salt
1 egg
3/4 cup dark molasses
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
Cream together butter and sugar. Add spices, salt, egg, and molasses, and beat well. Sift together flour, baking soda, and baking powder; add to butter mixture and beat again. Chill dough for several hours. Heat oven 350 degrees. Roll dough 1/4 inch thick. Cut into shapes. Bake for 8 to 10 minutes; remove to wire racks to cool.
Royal Icing: 2 large egg whites (or equivelent powdered egg whites); 4 cups sifted confectioners' sugar; juice of 1 lemon.
Beat the egg whites until stiff but not dry. Add sugar, lemon juice and beat for 1 minute more. If icing is too thick, add a little water. If too thin, add more sugar. Spread on cookies or decorate with pastry bag and tip.

Yum, I love these cookies and they are so fun to have around during the holiday's! I can't wait to try the recipe from Martha. Let me know if you try them how they are!

My son has been asking me to make gingerbread man cookies for awhile now so we have been searching for a good size cookie cutter (he's 2 1/2). Today we finally found what we were looking for, so before I made my post I thought I would just check quickly, never dreaming that someone would have been asking for this too!! Well Buddie it seems like we are on the same wave length, and trust mamasue to come on in with her great recipe from Martha Stewart no doubt!
I will think of you both while we make them, when I called my sister to tell her that we finally found the cookie cutter, her reply was Oh good now I can come make Cole's (her sons) christmas cookies for school. Looks like it will turn out to be a good investment.
