Biscotti is a cinch to make. I've made the ginger/chocolate chip biscotti from a CL a few years back maybe a half a dozen times now. I would go for the whole recipe because of the limited amount of ingredients in biscotti.
I have used regular instant coffee in place of espresso with great results. Good Luck!

I have a jar of Ferrara instatnt espresso. It's small, only 2 oz. It doesn't have a sticker on it, but I think I may have gotten it at Cost Plus, but some grocers carry it. That said, I would also use any instant coffee if you can't get the espresso. If you can get a dark roast instant, all the better. The recipe says you can use regular instant, just use twice as much.

Biscotti are not difficult to make. The baking method intimidates some folks, but it's really less work than standing up scooping out cookie dough, taking up baked cookies and starting over again. If you like these, you'll wish you went for the whole thing, but.....

The recipe should halve pretty well, using 1-1/4 cup flour plus 2 T, 1/2 cup sugar, 1/4 cup chips, eyeball 1/16th tsp of salt or use a fairly generous pinch, 2T espresso powder, 1 tsp hot water, 1 1/2 tsp oil, 1 tsp vanilla, 1 1/2 eggs (or 2 smaller ones). To half an egg, lightly beat it in a cup or bowl and measure out half, probably close to 2T.

I was really excited to try a few of the recipes for biscotti in the Nov. 2000 issue.
Except with my poor baking history, I'm worried about making 2 1/2 doz. worth. Can anyone make suggestions for how I can cut the recipe for espress-chocolate chip biscotti down to 1 doz.? I've tried before to "halve" baking recipes, and it is always disastrous.

Also, the recipe calls for "instant espresso," but I haven't been able to find it. Does anyone know of a popular brand that I could ask for at my grocery store?

to my questions about making biscotti. I was a little worried, but now I can't wait to try it!

If it's a hit, homemade biscotti in a new coffee mug would be a great Christmas present for friends & co-workers.
