I tried this recipe (from the November issue) last night. They were very good -- a big hit with my husband and 12 year-old son (the 7 year-old only eats macaroni and cheese and pizza, so we don't count his vote). This recipe was not hard to make. I made a double batch (which, sad to say, was almost entirely consumed in one meal) and the process of putting them together went quickly. I will definitely make these again. When I have more time I hope to try one of the homemade enchilada sauces that have been discussed here recently.
