wheat is made up of gluten and gliaden and most people assume it is gluten...regardless, here are some options for your houseguest...
Buckwheat
Rice
Corn
Potato
Tapioca
Bean
Sorghum
Soy
Arrowroot
Amaranth
Quinoa
Millet
Tef
Nut Flours
If you'd like more info, there is a gluten.net website...
http://www.gluten.net/diet.asp
that may answer more questions for you...
breakfast ideas could include hashbrowns, eggs, smoothies, fresh berries with cottage cheese, yogurts, oatmeal in small quantities for some people, healthfood stores have bulk bins of soy flakes that look like oatmeal...
for lunch, you could use corn tortillas and make wraps...you can fill them with re-fried beans and salsa; turkey and cheese; melted cheese with pizza sauce and topped with onions/green peppers.
Also, healthfood stores carry breads made with amaranth or rice (though not sure how tasty they are ;) ); stuffed baked potatoes filled with chili or broccoli and sauce or salsa.
There are also pastas made from cornmeal (quite tasty but DON"T overcook or it falls apart); you could make rice-veggie stirfries...
hope this helps.

Well, I'm no expert on the gluten thing but I recently cut out all wheat/flour from my diet (just temporarily!) and for breakfast I usually had eggs (cooked any which way), grapefruit or some other kind of fruit - of course there's also yogurt, breakfast potatoes, breakfast meats - plenty of non-bread type options I think. For lunch I usually had soup (basic soups with meat and veggies, no noodles or anything - I don't know if those are off limits) - or salads with meat or fish, etc. It wasn't all that hard to find lots of non-wheat options, I just tried to focus on veggies and fruits and proteins.
(Thankfully I'm not gluten intolerant though because I was glad to get back to breads and pastas, etc.!)
Hope this helps.
