What is the difference in apple cider and apple juice? Will apple juice substitue for apple cider in Mulled Cider appropriately?

I'm not sure what the difference is but know that cider has a stronger taste than the juice. I don't think that it would be a good substitute.

If you used a natural apple juice, such as Apple and Eve, I think you could substitute it for cider. If you want to get a very genuine flavor, I would make sure that the juice is 100% fruit with no sugar added.

I guess I'm in the mood to use the encyclopedia today! Here's what Encarta says about cider:
Cider, sweet or fermented juice of apples, used as a beverage and for making vinegar. Fermented, or hard, cider contains only 2 to 3 percent solids, instead of 12 to 15 percent as in the apple juice, and 2 to 8 percent alcohol. Cider brandy, or applejack, is derived by distillation from fermented cider. It contains 40 to 50 percent alcohol.

I'm not sure if this answers your question, but I've made "mulled cider" using apple juice in place of cider - I just put the spices in a cheesecloth bag and simmered it on the stove for a while. It tasted delicious and smelled wonderful! It's a great winter drink and kids love it too.
