I tried the roasted eggplant dish in the November issue and it was fantastic....The only thing I will do different next time is to use more mushrooms and onions. I must admit, I have never cooked eggplant, or bought one for that matter. I wasn't sure what I was getting myself into. If anyone is considering this dish, GO FOR IT!!!
