Have plenty of leftover spinach from our sandwiches to make a spinach salad this week. I have never found a GREAT dressing that I truly love. Since I know if I can find a good one anywhere, here's the place! Any suggestions are much appreciated!

I love this dressing so much...my mom gave me the recipe, and I couldn't even count how many times I've made it.

1 c. (okay, the original recipe calls for oil here, but I have to say that I have always used maybe a T. of olive oil, and the rest water -- it's always turned out great for me)
3/4 c. sugar
1/3 c. catsup
1/4 c. vinegar
1 t. Worchestershire sauce
1/2 c. dried onion flakes (I've sometimes omitted these; didn't miss them)
salt to taste
Whisk all ingredients together; toss with spinach when ready to serve.
I haven't kept a record, but I think this dressing keeps a while, too, if you store it in a glass jar.

This is one of my mom's best salads - every time I make it everyone raves about it. It's very tangy tasting. Not light though!

Spinach and Apple Salad

2 apples (red are best), peels left on
2 tbsp lemon juice
1/3 cup toasted almonds (slivered or sliced)
1 1/2 cups grated cheddar or gruyere
fresh spinach - about one bag or one head
Dressing:
1/3 cup oil
2 tbsp red wine vinegar
1/2 tsp dijon mustard
1/2 tsp salt
1/2 tsp pepper
1/4 cup sour cream
1/4 cup chopped green onion
dash tabasco

1. In blender or food processor, combine dressing ingredients and process until well blended.
2. Close to serving time, chop apples into bite-sized chunks and toss with lemon juice in a small bowl.
3. In a large salad bowl, combine spinach, cheese, and almonds. Toss with apples. Pour dressing over and combine.

Here's the one I use on spinach, grated smoked gouda, mushrooms and bacon.

2 tbl sesame seeds
3 tbl cider vinegar
2 tbl water
2 tbl honey
1 tbl Dijon mustard
1 tbl vegetable oil
½ tsp pepper
1 clove garlic, pressed
