Question for Chefandi..

I was going to make the sweet potato casserole that you recently reviewed for the virtual supperclub for Thanksgiving.

My question is, did you manually mash the sweet potatoes so they were a bit chunky or did you use the mixer to mash them for a smoother consistancy?

Hi Christ1ne! I manually mashed the sweet potatoes, they were so soft after cooking them that it was easy to do without the use of a mixer. Hope it turns out great, let me know!

I am making the sweet potato casserole for Thanksgiving as well as the Apple-Cider Pie.

Wish me luck. I'm have never had good luck with a pie crust. Mine always burn, or the dough falls apart when I roll it, or it sticks to the rolling pin, or I can never roll the dough to fit the ENTIRE pie plate.

But I figure if I ruin the pie...I can always redeem myself with the sweet potato casserole!
