I can no longer find my favorite ceaser dressing. Does anybody have a good low cal recipe for ceaser salad dressing or a vinaigrette? Thanks.

Joyce's Easy Caesar Salad Dressing

3/4 cup Parmesan cheese
1 egg -- coddle 1 minute
3/4 cup salad oil
1/4 cup lemon juice
1 teaspoon salt
1/2 teaspoon crushed red pepper
4 teaspoons Worcestershire sauce
1/2 teaspoon minced garlic
1. Coddle egg. Put in blender and beat until fluffy.
2. Add oil in slow stream. Reduce speed and add rest of ingredients in order.
3. Store in refrigerator in glass jar or Tupperware.
Yields 1 pint.

This "Creamy Caesar Salad w/ Spicy Croutons"

1 garlic clove, halved
1/2 c. fat-free mayonnaise
2 T. red wine vinegar
2 t. Dijon mustard
2 t. white wine
Worcestershire sauce
1 t. anchovy paste
1/4 t. black pepper
2 t. olive oil
3/4 t. Cajun seasoning
1 garlic clove, minced
2 c. (3/4-inch) sourdough bread cubes
18 c. torn romaine lettuce
1/3 c. (1 & 1/2oz.)grated fresh Parmesan cheese
1. Drop the garlic halves through the opening in a blender lid w/ the blender on; process until minced. Add the mayonnaise & the next 5 ing; process until well blended. Cover & chill at least 1 hour.
2. Preheat oven to 400 degrees.
3. Combine the olive oil, Cajun seasoning, &
minced garlic in a med. microwave-safe bowl.
Microwave on hi for 20 sec. Add bread cubes;
toss gently to coat. Spread bread cubes in single layer on a baking sheet, bake at 400 for 15 min. or until golden brown.
4. Place lettuce in a large bowl. Add dressing; toss gently to coat. Sprinkle w/
cheese; top w/ croutons. Yield: 6 servings
(serving size: 2 cups)

This is the one I always do - I am not a fan of creamy caesar dressings:
1/3 cup olive oil
2-3 cloves garlic minced
1 T. lemon juice (fresh squeezed if possible)
1 t. mustard powder
1 T. worcestshire sauce
salt & pepper to taste
1 egg yolk (opt)
Do your romaine, I like the zyliss spinner, bag that. Put oil and garlic in wooden salad bowl, add other ingredients just before service, mix well - add romaine - toss well - add freshly grated parmesan reggiano (I always keep this handy and it probably works out cheaper than the cheaper stuff) I have a great rasp/grater to grate it with - this is simple and really good - you can also add croutons or bacon if so inclined - we like it just plain. Hope you try!

This is my absolute favorite from the "Quick Cuisine" cookbook.
3/4 c. extra virgin olive oil
1/4 c. lemon juice
1 tbs. dijon mustard
1 clove garlic through press
1/2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. dried basil
1 tsp. dried parsley
Mix together in shaker jar.
Sometimes I use a bit less salt and I've used fresh basil and parsley.
