Hi,
I need your expertise, I used a small amount of a can of evaporated milk and I am wondering if I can freeze the rest in a freezer bag.
Is anyone sure of whether or not you can do this. I dont want to try it and then use it in something when it is no longer any good.

I have always heard that you can freeze mil so it would seem that you could probably freeze evaporated milk. I think I would use something more sturdy than a baggie though, maybe a freezer bag or two.

Hmmmm.....I never had, but I don't see why you couldn't. I would fill ice cube trays with the milk, freeze and then place them in a ziplock bag. That way you still have small quantities as needed. http://www.cookinglight.com/bbs/smile.gif

There's a new Zip Lock freezer bag that "stands up" which might be better for heavier liquid things (milk, sauces etc)

"How about a recipe for evaporated skim milk instead that you can use next time. For 1/2 cup evaporated skim milk, combine 1/2 cup water and 1/3 cup nonfat dry milk. Thank JoAnna Lund's cookbooks for this. I use it all the time for muffins and such."
I know this doesn't answer your freezing question, but maybe you wont have to buy it anymore.
