Hi everyone! I made the Sweet-Potato Casserole with Praline topping last night and it was delicious! If you like your sweet potatoes with brown sugar and nuts this is up your alley. There are even instructions in the magazine on how to freeze it for a later date. This one would be great for Thanksgiving! I hope that all of yours turned out just as good.
Again this is one that you will want to try!
I made the Pumpkin Struesel Bread (I neglected to post the recipe but can easily do so if needed) for our second menu. It is a keeper! It was REALLY moist (I'm sure the pumpkin and yogurt helped) and had a wonderful blend of spices. It also made my house smell wonderful, as mentioned in another thread. My whole family loved the Strusel topping the best. It kind of melts into the bread. We finished off the loaf in 24 hours!
Also of note, my can of pumpkin was the smallest I could find but gave me enough to make two loaves. I froze the second loaf for Thanksgiving company!

andi- Did you find this recipe in the Nov. issue of CL? If not where is it, b/c it sounds wonderful!!

The curry-chutney snapper was great! I really liked it. There's definitely a curry taste in the fish, but the chutney goes in the sauce, so it isn't as pronounced. I used white wine instead of chicken broth, so next time I may try it the correct way. Anyway, it was good. I also used a lot of cilantro, because I love the stuff.
Oh, and the recipe calls for red snapper or mahi, but I used yellow-eye snapper,and I really think any firm white fish would do. I'll probably make it again http://www.cookinglight.com/bbs/smile.gif

Hi gang, I made the Pumpkin Streusel Cheesecake over the weekend, and it is a definate keeper!!
It was very creamy with a wonderful punkin pie flavor.
The gingersnap crust tasted great but was a bit soggy.
I prefer my streusel topping a bit chunkier, but I may have ground the gingersnaps too fine.
A great alternative to traditional Pumpkin Pie.

This is a really fun idea! I actually tried both the Roasted Red Pepper and Walnut Dip and the Broccoli with Almond Breadcrumb topping. I thought both were excellent. I loved the flavor of the broccoli topping!

Emilycat: The Red Snapper recipe sounds great. I've been wanting to incorporate more fish into my menus but my big concern has been smell (I don't have a fan over my stove). Did the dish smell up your kitchen?

Do you mean because it's fish or because the dish uses curry? I actually cook fish all the time, and I don't have a fan either. I also have a very small apartment, but the smell of fish doesn't bother me at all. I wouldn't worry about the smell; just make sure you wash all your cooking pots and things out. Don't not incorportate fish into your diet because of the fishiness; open a few windows if it bothers you, but the health benefits of eating it will far outweigh anything else.

Wow, sounds like everyone loved their parts of the meal...wish I had loved mine http://www.cookinglight.com/bbs/frown.gif I made the sun-dried tomato vinaigrette for our greens and, well, it was just blah. I halved the recipe since there's just the two of us here, and I'm 99% sure I did everything right. It just didn't have much flavor. Oh well, better luck next time.

The other thing you can do to get any fish smell out of your house, is to light one or two fragrant candles while you're cooking and leave them burning the rest of the evening. It's worked well for me.
