Haven't done as much planning as usual this week as meals will depend on the weather (its going to be hot), but here's what cooking in my kitchen this week.

Sunday

- Herbed Pork with Sauteed Wild Mushrooms
- Feta Mashed Potatoes
- Braised Bok Choy
- Vanilla Orange with Chocolate Fudge Swirl Ice Cream (homemade :p )

Monday

- Lasagne
- Salad


Tuesday

- ??? but probably chicken

Wednesday

- Lasagne (leftovers)
- Salad

Thursday

- ??? again, but I know it will be red snapper

The rest of the week is undecided as we're going away, so it'll either be at PILs or a restaurant

Then another day I'll make a turkey recipe I found on Epicurious:

Southwestern Turkey with Garlic-Ancho Chili Paste and Gravy
Santa Fe Christmas Turkey Stuffing

If I made something like this at the holidays I'd have a mutiny so it'll be a sort of Christmas in June!

Tomorrow night I'm going to a party so I'm taking:

Sneezles - can you please post these two recipes or give me the link? I totally agree about having a mutiny at the holidays. But I always long to try something different with turkey then. I never buy turkey other than in November and December but I'd like to and these sound good.

Here you go:

SOUTHWESTERN TURKEY WITH GARLIC-ANCHO CHILI PASTE AND GRAVY
Paste
3 large heads garlic


3 large dried ancho chilies, rinsed, stemmed, seeded, torn into pieces
1/2 cup corn oil
1 1/2 teaspoons ground cumin
1/2 teaspoon honey




Turkey
1 17-to 18-pound turkey, neck and giblets reserved


2 tablespoons corn oil
1 1/2 pounds turkey neck or wings, cut into 1-inch pieces
1 large onion, chopped
3 celery stalks, chopped
1 large tomato, chopped
1 teaspoon whole allspice berries
5 cups canned low-salt chicken broth


Gravy
2 cups (about) canned low-salt chicken broth


6 tablespoons all purpose flour
Cayenne pepper

For paste:
Preheat oven to 350°F. Separate heads of garlic into individual cloves (do not peel). Pierce each clove once with toothpick. Scatter garlic on baking sheet; roast until tender and beginning to brown, about 25 minutes. Cool 5 minutes. Peel garlic, cutting hard tip off each clove. Pack enough garlic into 1/2-cup measuring cup to fill (about 40 cloves); reserve any remaining garlic. Blend 1/2 cup garlic in processor to form course puree.

Meanwhile, place chilies in small saucepan. Add enough water just to cover. Simmer over medium-low heat until chilies are soft and most of water evaporates, about 15 minutes. Add chili mixture, oil, cumin, and honey to garlic in processor. Puree until smooth. Season with salt and pepper. (Can be made 1 week ahead. Cover paste and garlic; chill.)


For turkey:
Pat turkey dry. Season with salt and pepper. Slide hand under skin of turkey breast to loosen skin. Spread 1/2 cup garlic-paste over breast under skin. If stuffing turkey, spoon stuffing into main cavity. Rub 2 tablespoons paste all over outside of turkey. Reserve remaining paste for gravy. Tie legs together loosely to hold shape of turkey. Place on rack set in roasting pan. (Can be done 1 day ahead if turkey is not stuffed. Chill turkey and paste separately.)

Position rack in lowest third of oven and preheat to 325°F. Heat 2 tablespoons oil in heavy large skillet over high heat. Add neck and giblets, turkey neck pieces and onion; sauté brown, about 15 minutes. Place contents of skillet around turkey in pan. Add celery, tomato, allspice and any reserved garlic to pan; pour in 2 cups broth. Roast turkey 1 hour 30 minutes. Tent turkey and entire pan loosely with heavy-duty foil. Continue to roast turkey until meat thermometer inserted into thickest part of thigh registers 180°F. or until juices run clear when thickest part of thigh is pierced with skewer, basting often with pan juices and 3 cups broth, about 1 hour 40 minutes longer for unstuffed turkey (about 2 hours 25 minutes longer for stuffed turkey). Place turkey on platter. Tent with foil; let stand at least 30 minutes. Reserve mixture in pan for gravy.


For gravy:
Using tongs, remove turkey parts from pan; discard. Pour mixture in pan into sieve set over large bowl. Press on solids in sieve to release liquid. Spoon fat from pan juices; add enough broth to juices to measure 6 cups.

Stir 1/2 cup reserved garlic-chili paste in heavy saucepan over medium-high heat until liquefied. Add flour and stir 1 minute (mixture will be very thick). Gradually add 6 cups broth mixture, whisking until smooth. Simmer until reduced to 4 1/2 cups, about 20 minutes. Season with cayenne, salt and pepper.

Serve turkey with gravy.

Serves 14.

SANTE FE CHRISTMAS TURKEY STUFFING
1 pound kielbasa or other smoked sausage, halved lengthwise and cut
into 1/4-inch slices
4 cups chopped onions (about 2 very large)
2 cups chopped celery
1 1/2 cups chopped pecans (a 6-ounce can)
1 stick (1/2 cup) unsalted butter
an 8-ounce package herb-seasoned stuffing buttermilk corn bread or
3 cups packaged corn bread stuffing
2 tablespoons crumbled dried sage
1 1/2 cups chopped fresh parsley leaves
three 4-ounce cans green chilies, chopped, or 5 to 7 fresh poblano
chilies, roasted and peeled and chopped, or to taste
1 cup chicken broth, or to taste

In a large heavy skillet cook the kielbasa over moderate heat, stirring, until it is browned and transfer it with a slotted spoon to a large bowl. In the fat remaining in the skillet cook the onions and the celery, stirring, until they are softened and add them to the bowl. In the skillet sauté the pecans in the remaining fat and the butter over moderately high heat, stirring, until they are golden and add the mixture to the bowl with the stuffing, the corn bread, the sage, the parsley, and the chilies. Add enough of the broth to moisten the stuffing to the desired consistency and let the stuffing cool completely. Makes about 14 cups, or enough to stuff a 12- to 16-pound turkey with plenty to cook separately for those who like their stuffing less sinfully rich.

To Roast Peppers
Using a long-handled fork char the peppers over an open flame, turning them, for 2 to 3 minutes, or until the skins are blackened. (Or boil the peppers on the rack of a broiler pan under a preheated broiler about 2 inches from the heat, turning them every 5 minutes, for 15 to 25 minutes, or until skins are blistered and charred.) Transfer the peppers to a bowl and let them steam, covered, until they are cool enough to handle. Keeping the peppers whole, peel them starting at the blossom end, cut off the tops, and discard the seeds and ribs. (Wear rubber gloves when handling chilies.)

Here's my tentative menu:

Sunday - White Cheese and Sausage Pasta, CL J/F 2002 with a salad and bread.

Monday - Summer Veggie Salad with Grilled Bread from CL last summer.

Tuesday - probaby leftovers or homemade spaghetti and meatballs (CL's Beef Meatballs - everything is in the freezer.

Wednesday - Chicken and Couscous Salad with Orange-Balsamic Dressing, from Epicurious.com with some fresh fruit. We're taking this on a picnic dinner to a lake to listen to some Patriotic Pops by a local orchestra. I will also be making Chunky Chocolate Peanut Butter Bars from the Chocolate Cake Mix Doctor as a special picnic treat.

Thursday - I plan to wing a fritatta using the leftover veggie salad from Monday. To be served with some sort of potato side dish.

Friday - Homemade pizza. I like to decide what kind of pizza at the last minute.

Saturday - We are going to a party. I think I will be bringing Mango-Curry Shrimp Salad in Wonton Cups from Epicurious.com.

Sunday - Shrimp and Chicken Fondue. Maybe served with a salad and risotto?? The boys love to cook their own meat and shrimp. Hopefully it will cool down a bit by then!

I'm very intrigued by the Turkey Alfredo pizza Valchemist mentioned; will have to dig that recipe out.

Stop by Pike Place Market on way home & buy stuff, if needed

Friday:
out, hopefully

Saturday:
some sort of tuscan/florentine steak to go with super Tuscan wine we bought at a tasting

Hmm, looks like I need some more vegetables.

As usual, just a make ahead, eat whenever kind of menu:

The next couple of weeks I'll be putting together simple dishes for both DH and my pregnant sister (and her DH) so they won't have to rely on fastfood (he works into the evening and she doesn't need to be on her feet cooking). Any suggestions for make ahead meals for soon to be moms welcome.

JeAnne: Your pizzetta recipe from last week will have to go on next week's menu for sure. I had to use up leftover mascarpone, so I picked that pizza for this week and decided I couldn't make pizza twice in one week. But I'm looking forward to next week's pizza more!

I got the recipe for the Goat Cheese-Stuffed Turkey Burgers off of Epicurious. I haven't figured out pointage, but after a few modifications it doesn't seem too bad. I just got done with dinner a little bit ago and they were yummy!! Very flavorful. DBF even gave them an 8, and on his wacky scale that is a really high mark. Let me know if you don't find the recipe easily and I can type it out for you.

Monday--supposed to be Curried Orange Pork, but it was WAY to hot to cook and we ran some errands so it was Taco Bell :eek:

So, it's Tuesday, but with all of the excitement over the amazing Seattle weekend, I didn't have a chance to plan out a menu until yesterday. Here 'tis- there's a tofu theme this week!:

Monday
Gingered Greens and Tofu Moosewood Cooks at Home Jewel- I used the ginger juice we bought at Sur La Table- it was EXCELLENT! Very distinct ginger taste- more so than fresh ginger, IMHO.

Tuesday
Red Curry Braised Tofu with Snow Peas, Red Pepper and Scallions Natural Health, March '02

YP: Do you have a good recipe for braised bok choy? I tried one from Epicurious and it was OK but not more. We order a great "baby bok choy in garlic sauce" that we love, and I'm sure it can't be very complicated -- tender baby bok choy, sliced garlic, julienned ginger and a thin broth of....?
