I wanted to try the orange mandarin chicken (july 2002) tonight and I was wondering if anyone has tried it yet? If so, what did you serve with it? They suggest somen noodles, but I was thinking jasmine rice. Any advice?

Orange Madarin chicken

2 tsp dark sesame oil
4 (4-oz) skinless, boneless chicken breast halves
1/2 tsp salt
1/4 tsp black pepper
1 (11-oz) can mandarin oranges in light syrup, undrained
1/2 cup chopped green onions
1 tbsp finely chopped seeded jalapeno pepper
1/2 cup fat-free, less sodium chicken broth
1 tsp bottled minced garlic
2 tsp cornstarch
1 tbsp low sodium soy sauce

1. Heat oil in a large nonstick skillet over medium-high heat. Sprinkle chicken with salt and pepper. Add chicken to pan; cook 4 minutes on each side or until browned.

2. While chicken cooks, drain oranges in a colander over a bowl, reserving 2 tablespoons liquid. Add oranges, 2 tbsp liquid, onions, jalapeno, and garlic to pan. Reduce heat; simmer 2 minutes. Combine broth, soy sauce, and cornstarch; add to pan. Bring to boil; cook 1 minute or until slightly thickened.

Yield; 4 servings

Haven't tried it yet, but I have it on the menu for the week. We had the grilled corn on the cob with the lime butter today. It was excellent, I didn't think it would have that much flavor, but it was just right.

I would think that the rice would be good with it.

This was so simple and yet so tasty. Definitley will do it again. I followed the directions exactly.

I made this as directed but would make some changes if I make it again. The sauce was good (although nothing special) but the oranges fell apart before it was done. I would add them at the very end just before serving them. I served it with regular noodles since that's all I had at the time.

DH cooked this for me last night, as I had a late aerobics class. He served it over brown rice and followed the recipe exactly as written. It was delicious and the combination of sweet (mandarin oranges) and spicy (jalapenos) was quite interesting.

I made this last night and also served it over brown rice. I thought it was very tasty and easy to throw together. I'll definitely be making it again.

We had this last night too with white rice. At first bite, I wasn't too impressed. But then it definitely grew on me and DH and I really enjoyed it. Plus, it was very easy. The leftovers were good today too.

I'm so glad this is getting good reviews. I have it on the menu for next week while DBF is out of town. This way I can get dinner and a couple of lunches out of it for myself. If he's around he tends to monopolize any leftovers. :) I plan to serve it over soba noodles.

We tried this last night and enjoyed it. I used lo mein noodles since my neighborhood grocery store didn't carry any of those recommended in the recipe. I think I'd prefer rice, maybe with some dried cranberries or nuts sprinkled in. Served it last night with steamed pea pods sprinkled with a little soy sauce and slivered almonds. DH is eating the leftover portion for lunch today.

Another thumbs up here. I did it a little differently of course :D

I cut up the chicken and marinated it in orange juice, ginger and garlic all day. I then sauteed the chicken as written except adding snow peas to make it more stir fry like. I served this over ramen noodles (without seasoning). I'm glad that I marinated the chicken because I don't think it would be too orangey without it! I added the oranges at the very end and they still broke up so I'm not quite sure how they took that beautiful picture ;) But it was easy and quite flavorful and I have another recipe for those ramen noodles apart from the asian beef one that I love so much!

I really enjoyed this. Following someone's advice I put the oranges in at the end and my husband complained the oranges were too big! I served it with mashed potatoes (:eek: the instant kind). I didn't even fool with any noodles and I thought it was fine without them. Good taste for incredible ease of the recipe.

We loved this. Very simple to put together & I had no problem with the oranges. Made it just as directed, though I use more chicken and consequently more stuff for the sauce. Served it over Asian rice noodles with a side of steamed snow peas.
