Help! I'm trying to find a wonderful CL salad recipe that called for strawberries and pre-cooked roasted chicken. I thought it was in one of the spring 2000 issues, but I've searched the index and can't find it. TIA JennyLiz

Chicken and Strawberries over Mixed Greens

2 cups chopped roasted skinless boneless chicken breasts (about 2 breast halves)
2 cups quartered small strawberries (about 1 pint)
1/3 cup finely chopped celery
1/3 cup finely chopped red onion
2 tablespoons golden raisins
1 tablespoons sesame seeds, toasted
1 tablespoon chopped fresh tarragon or 1 teaspoon dried tarragon
1 tablespoon extra-virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon paprika
1/8 teaspoon salt
1/8 teaspoon black pepper
4 cups gourmet salad greens

Combine first 5 ingredients in a large bowl. Combine sesame seeds and next 6 ingredients in a small bowl, stirring well with a whisk. Pour over chicken mixture; toss well to coat. Cover and chill 1 hour. Serve over salad greens. Yield: 4 servings (serving size: 1 1/4 cup chicken mixture and 1 cup greens).

Peggy- That's the one! I guess I was a year off in my search. Have you tried it? I made it all the time last spring and always received rave reviews. Can't wait to make it again! Thanks!!! JennyLiz

Yes, we have made it and were very happy with the outcome. I made it for dinner last summer when the weather was too hot to heat up the kitchen. Very refreshing and satisfying summer salad!
