View Full Version : Need gluten free picnic ideas

My in-laws will be here for a visit during the week of the 4th and my father in law is gluten intolerant. I've gotten used to making our menus gluten free when they are here but this is the first time we are planning a picnic and I'm stumped. Our family picnics are usually fried chicken or sandwiches both of which are out for him (He doesn't really care for gluten free bread.) Any other ideas?

You can make chicken nuggets with cornmeal:


Beth's Chicken Nuggets


2 lbs. chicken breast
1 cup corn meal
1 teaspoon salt
½ teaspoon pepper
1 teaspoon garlic salt

Cut chicken breast into bite-sized pieces. Put other ingredients into a Ziploc bag, seal, and shake to mix. Drop a couple of pieces of the chicken into the corn meal mixture, seal the bag, and shake to coat. Remove to plate. Repeat until all of the chicken is coated. These can be fried in a deep fryer, in a skillet, or sprayed with PAM and baked at 350 degrees for 30 minutes.


And even though he doesn't care for gluten-free bread you could still use the g-f flour to make the fried chicken. Or how about a nice pasta salad with g-f pasta?

If you pack a cooler you can take chicken salad making sure it is cold all the time. You could still make the fried chicken just use gluten free flour or you can make a batch for him using corn flakes as coating and bake in the oven. Gluten free brownies are good (check in heath store Gluten free pantry products. Product for life makes great bread. I buy the pecan rice bread which does not crumble and its sturdier. You could make some corn bread (all corn flour) for him if he does not want gluten free bread.
