My first July recipe. It was very good, but not good enough to make again without modifications. The flavor of the cheese and the grilled corn is exellent. I also loved the red onion and I added some roasted red pepper. In my opinion, the grated lime taste did not fit in here...it was a strange flavor to add with the other flavors going on. The pizza was also too dry. There needs to be a sauce on this one. I thought maybe processing the roasted red peppers into a paste could work. This to me tasted like loaded foccaccia more than pizza.

I also made this as my first July recipe. We had it Saturday night for dinner per DH's request when he saw the picture. We really liked it (DH more than me), but we doubled the toppings and only made 1 pizza (freezing the other half of the pizza dough). Obviously, with double the cheese, it does not qualify as light. But I guess it does eliminate the dryness because we didn't find it dry at all. I think a red pepper sauce would be really good, though, and that would keep it light.

I thought it tasted like an open-faced quesedilla. I also thought it would be really good as an appetizer/finger food for parties cut into thin slices, since it would probably still taste good at room temperature.

Thanks for the reviews. I have my eye on this one. I think if I try it I'll try some pureed roasted peppers for a sauce and skip the lime (that seemed kind of strange to me, anyway).

We had this tonight, too. We LIKED it... but didn't especially LOVE it. The smoked mozzarella is excellent, though! I think I will be using that instead of regular mozzarella in other recipes in the future.

I made it exactly as directed, except I didn't have a red onion, so I used a Vidalia. I think the red onion would have added a lot of visual appeal. The grilled corn was good... and I even liked the grated lime. One thing we did notice, (I forgot to salt the pizza before baking, as directed) - and once I realized that, we salted it at the table with fresh ground sea salt - A BIG DIFFERENCE! HUGE, in fact! That alone upped my rating from a "5" to a "7"!!!

DH and DD agreed with me... pretty much "6's" and "7's" around the table.

But I'm glad I tried it! :)

We found this to be pretty good, too. I agree w/JeAnne that it seems like it needed a sauce of some sort! Made to pizzas just as directed, one in the oven (for leftovers), the other on the grill which did seem a little dry.

I too reviewed this today, we had it for dinner. Both my bf and I loved it. I didn't add the lime though, I actually omitted it by mistake. I didn't find it dry at all. I rolled my crust pretty thin so maybe that helped.
