I was looking for a wild rice recipe and found this one that BlueMoose posted back in November. I couldn't find any reviews on this, so I thought I'd share.

Not sure where it's from originally, but it's fantastic! The thing I love about wild rice is its nutty flavor and chewy texture, and this dish was no exception. Having so much broccoli in the dish itself took care of any need for a veggie side dish. With just salt, pepper, and lemon juice for seasoning, I was surprised at how flavorful it turned out to be.

Definitely a repeater! We had our rice with grilled salmon filets (seasoned with Wendy w's fantastic spice rub ) for a simple, healthy meal.

I haven't made that for a long time. I should make it again. It's one of those recipes that I've had for so long, I can't even remember when or where I got it. Here it is for anyone who's interested...:)

Confetti Wild Rice

Amount Measure Ingredient -- Preparation Method

1/2 cup wild rice -- uncooked
1 1/2 cups fresh mushrooms -- sliced
2 green onions -- sliced
1 tablespoon oil
1 1/4 cups water
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon fresh lemon juice
10 ounces broccoli -- cooked

In a deep skillet, saute wild rice, mushrooms, and onions in oil for about 3 minutes, until onions are tender. Stir in water, salt, and pepper. Heat to boiling, stirring occasionally; reduce heat. Cover and simmer 40 to 50 minutes or until rice is tender; drain if needed. Stir in lemon juice and broccoli. Continue to cook until just heated through.

Do you have the nutritional info on this dish?

This is embarassing, but I am plugging all of my foods into the website fitday.com to make sure I am staying within my guidelines. Of course I'm getting all obsesso about it, and not wanting to cook anything unless I can plug it in!!

p.s. As I typed this, a grateful client just brought a box of Godiva chocolate into my office!! Help!! I will pass it right off to DH tonight, who of course won't gain an ounce.
