View Full Version : need sauce ideas for asparagus
i put this question in my review of the asparagus bundles - but i will try it here too.
i am looking for sauces that would be good with asparagus besides hollandaise (i'm not a big fan of it). any suggestion would be great.

This is not a sauce and not light, but it is my family's favorite. Cook asparagus just till crisp. Melt a few tablespoons of marg. and mix with about 3/4 cp. breadcrumbs. Layer asparagus, breadcrumbs and some shredded mozzerella cheese (2 layers of each). Put in microwave for 1 - 2 min. till cheese melts.

Try roasted red bell peppers. (I usually cheat and buy the canned ones.) And then add some favorite spices - i.e. garlic, onion, maybe a dash of cinnamon. (I would saute the onions and garlic and then add the peppers.)
If you want more of a sauce, you might try pureeing the peppers.

*Sesame Asparagus w/ Garlic
1/4 c. rice vinegar
3 T. low-sodium soy sauce
2 t. dark sesame oil
2 garlic cloves, crushed
1 pound asparagus
1/4 c. water
Sesame seeds (optional)
1. Combine the first 4 ingredients in a small bowl; set aside. Snap off tough ends of asparagus. Place asparagus & water in an 11x7-inch baking dish. Microwave at high 3 minutes or until just tender; drain. Pour the vinegar mixture over the asparagus, & toss well. Chill at least 1 hour, or overnight. Serve cold or at room temperature.
Sprinkle w/ sesame seeds if desired. Yield:
4 servings.

*Grilled Asparagus
1 pound asparagus
3 T. balsamic vinegar
2 T. fresh lemon juice
1 T. olive oil
1 T. low-sodium soy sauce
1/8 t. black pepper
Cooking spray
1. Prepare grill.
2. Snap off tough ends of asparagus.
Combine all ingredients except cooking spray
in a large zip-top plastic bag; seal & marinate for 30 minutes. Remove asparagus from bag, & discard marinade. Place on grill
rack, coated w/ cooking spray; grill 5 minutes on ea. side until asparagus is done. Yield: 4 servings.

My favorite is equzl parts of mayo and mustard with lime juice....put over COLD asparagus! YUMMMMMYYY!!!!!!

I got this recipe from a TV show a few years ago. My family loves it.
Mix together:
1/8 tsp garlic
1 tsp fresh ginger(minced)
1/2 tsp sugar
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
Peel bottoms of asparagus. Roll cut (this means, slice through the asparagus spear at an angle; roll the asparagus slightly and cut another piece at an angle, continue).
Boil asparagus; then toss with sauce.

My absolute favorite way to prepare asparagus is very lightly coat it in olive oil then grill. When finished, season with salt and pepper and crumbled feta cheese. Very tasty, and can be done without the grilling, just put the oil, salt and pepper and cheese over the cooked spears.
