View Full Version : Help! Substitute for taco seasoning mix

I realized just now (10:15 p.m.) that I want to put the Slow-Cooker Beef and Bean Burritos on before I leave for work tomorrow morning, but can't. I thought I had all the ingredients, but realize now that I don't have a package of taco seasoning mix (1-1/4 oz). Does anyone know what would be a good substitute and how much of it I would use? It's probably got chili powder and cumin in it, both of which I have, but is that all? And amounts would be important, because I'm not a good guess-cooker. Hope some of you are awake and reading the board. I'll check back in 9 hours...thanks...zzzzzzzzzz.
Cook's Illustrated has a recipe for beef tacos, so I think you can take the seasonings from there.
Beef Filling
2 tsp. ceg. oil
1 small onion chopped small (~2/3 cup)
3 med. garlic cloves, minced or pressed (~1 Tbl)
2 Tbl chili powder
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp. dried oregano
1/4 tsp cayenne
salt
1 lb. 90% lean ground beef
1/2 cup canned tomato sauce
1/2 cup canned low sodium chicken broth
1 tsp.brown sugar
2 tsp. vinegar, pref. cider vinegar
gr. pepper

Tried the taco recipe from Cooks Illustrated but used ostrich meat to keep it lighter, left out the chicken broth and used a whole cup of tomato sauce as I have 1/2 can leftovers....very good.

I have used the recipe that Sneezles posted and it's very good. That's my stand taco meat recipe now!!!
We use a variation of Sneezles's recipe when we are just cooking for ourselves and but often use something similar to the CI recipe when we are cooking for company. I like the taste of the sauce sans vinegar and sugar while many of our friends, who are perhaps more accustomed to the little sauce packets, seem to prefer the CI version. Regardless of the sauce the meat is almost always venison (I prefer shredded and DH prefers burger) or occasionally leftover grouse. We like chipotle as a substitute for the chile/cayenne and often add cilantro and lime wedges.

Just for the record, I chose to use Sneezles' recipe. It was good, and so were the Slow Cooker beef and bean burritos! (Served right after we finished the margaritas!:D
