I've been on a roll, trying out new recipes that I've taken from this BB. I want to thank whomever gave us this following recipe because it was easy and good. Plus, it helps to use up buttermilk. :p

Taco Flavored Oven Fried Chicken

4 boneless, skinless chicken breasts (about a pound and a half)
1 cup buttermilk
1 cup breadcrumbs (Progresso Parmesan Flavored)
1/4 cup flour
1 packet of taco seasoning mix (I used Old El Paso)
1 tsp. salt
1/2 tsp pepper

1. Put chicken breasts in large ziplock bag.
2. Pour buttermilk over chicken in bag
3. Add one tablespoon of the taco seasoning to buttermilk/chicken.
4. Marinate for at least 2 hours (you could probably skip this but I find that buttermilk tenderizes chicken)
5. Mix breadcrumbs, flour, remaining taco seasoning, salt and pepper
6. Pour some of crumbs on a pie plate. Lift buttermilk coated chicken breasts out of bag and roll in crumbs. Or, you could do the shake and bake method
7. Spray pan with cooking spray. If you have a rack you can set on the pan, spray that. Set chicken pieces on rack on in pan
You could also use a broiler pan.
8. Optional: Spray chicken pieces with butter flavored Pam if you have some around.
9. Bake chicken pieces at 375 for about 35 to 40 minutes

Thanks again for the recipe. I'm doing better about keeping track of whose recipe I'm trying so hopefully I'll be able to thank people in the future.

Shelly- thanks for the reminder. I saw this one before and it looked great, but I haven't gotten around to making it yet.

Hee Hee Hee! That was me!!!!!

I found that recipe on the Pillsbury Bake-off site (it was a finalist) and I made a few modifications. I'm so glad you dredged (no pun intended) it up again and reviewed it.

Gail said that Psycho Chicken was ignored for months before it was brought up again too......not that this is Psycho Chicken.

How do you guys think this would be with a packet of ranch dressing mix in place of the taco seasoning? It obviously wouldn't be "taco" chicken any more, but it sounds good to me. :)

Ranch dressing is pretty salty, so I'm pretty sure you wouldn't need the added salt the Taco recipe calls for.


Hiddenvalleyranch.com has a recipe that just calls for this:

Crispy Ranch Chicken

1/4 cup
Unseasoned dry bread crumbs or cornflake crumbs

1 packet/1 oz.
Hidden Valley® Seasoning & Salad Dressing Mix

Bone-in chicken pieces

Combine seasoning & salad dressing mix with bread crumbs in a gallon size Glad-Lock® Zipper™ storage bag. Add chicken pieces; seal bag. Shake to coat chicken. Bake chicken on ungreased baking pan at 375°F. for 50 minutes or until no longer pink in center and juices run clear.

Makes 4 to 6 servings
