We went up to Asheville, NC today to the Biltmore Estate (250 rooms), and had a wonderful buffet lunch at the restaurant. There was a marinated red cabbage, jicama, apple salad that I had three helpings of!! I have no idea if it was light or not (I sure hope it was)but I would kill for the recipe! If any of you are within distance of this place, it is a wonderful day trip.

Joyce Sounds like a great place. About your red cabbage salad since its a big rest they probably have a cookbook out. Check with www.bn.com (http://www.bn.com)
if not you can email the restaurant/hotel and inquire if they have a cookbook or recipe.
Good luck. You might also try Bon Appetit or Gourmet. People request after their trips recipes from restarants and many times they do get them http://www.cookinglight.com/bbs/smile.gif

Thanks for the Bon Appetit idea. I did check a cookbook at Biltmore and the recipe was not included. It was probably the ONLY thing we had that just might be light!!

They do indeed have a cookbook!

Bounty of Biltmore Cookbook: A Recipe Collection from Biltmore Estate (Oxmoor House, $24.95)

"The recipes in this cookbook, thank heavens are not historical in nature. Victorian dining was heavy in nature. The "Biltmore Bounty" book is filled with quite useful recipes from the modern estate, which is managed by G.W.'s great- grandson, William A.V. Cecil Jr., chief executive officer of the Biltmore Co."
