I am looking for a way to use some peach salsa-anyone have some favorites out there? Sue

A good peach salsa recipe accompanied this recipe. I made this for a large group last summer and they all really enjoyed it.

Grilled Teriyaki Pork Chops, CL July 1999 (4 servings)

24 ounces center-cut pork chops, 3/4 inch thick
1/4 cup low sodium soy sauce
3 tablespoons shallot, minced
2 tablespoons dry white wine
2 tablespoons fresh lime juice
1 tablespoon fresh ginger, minced and peeled
1 1/2 teaspoons brown sugar
2 garlic cloves, minced

Trim fat from pork. Combine pork and next 7 ingredients (pork through garlic) in a large zip-top plastic bag. Seal and marinate in the refrigerator 4 hours, turning bag occasionally. Remove pork from bag, reserving marinade.

Prepare grill.

Place pork on a grill rack coated with cooking spray; cook 7 minutes on each side or until done, basting frequently with reserved marinade.

oops the peach salsa got left out. This is also one of my favorites.

Summery Peach Salsa:

1 cup diced peaches
1/2 cup diced plum
1/4 cup minced shallots
3 tab. orange juice
2 tab. minced fresh parsley
1 teas. grated lime rind
2 tab. fresh lime juice
1 1/2 tab. chopped seeded jalapeno pepper
1 tab. minced fresh mint
1 tab. honey
1 teas. minced peeled fresh ginger

1. Combine all ingredients in a bowl. Cover & chill. Yield 2 cups

That salsa is also one of my favorites. I can hardly wait till the really good peaches are here. The ones now are hard, mealy and tasteless.
