View Full Version : ISO taco salad recipe

We are going to a family reunion tomorrow and I would like to bring a taco salad I've had a couple times. I know you mix everything together, it has corn chips, and either french or catalina dressing. I have seen the recipe on the net, and I was pretty sure it was here, but I've done a search and can't seem to come up with it. Anyone know what I'm talking about? TIA!

I used to make my taco salad with regular dressings, as suggested in the allrecipes. com list, but have found that my family much prefers using a mild salsa as the dressing! When using salsa there isn't added fat, plus it just tastes more Mexican. I have everyone top their own dished out salad with the salsa. I use lettuce, cheese (cheddar, jack, or both), olives, crushed tortilla chips, tomatoes, kidney or black beans, and ground beef cooked in seasoning. I have also used ground turkey, or left over chicken, which I add seasoning to.

In a recent issue of Cook's Illustrated, they give the recipe for homemade taco seasonings. I tried it and it is good, easy and probably healthier for you than the packet of taco seasonings you buy at the store. Here it is:

2 t. corn or veg. oil
1 small onion, chopped
3 medium garlic cloves, minced or pressed
2 T. chili powder
1 t. ground cumin
1 t. ground coriander
1/2 t. dried oregano
1/4 t. cayenne pepper
salt
1 lb. 90% lean or leaner ground beef
1/2 cup canned tomato sauce
1/2 cup canned low-sodium chicken broth
1 t. brown sugar
2 t. vinegar, preferable cider vinegar
ground black pepper

Heat oil in medium skillet over medium heat until hot. Add onion and cook until soft. Add garlic, spices and 1/2 t. salt, cook, stirring constantly, until fragrant, about 1 minute. Add ground beef and cook, breaking up meat w/wooden spoon and scraping pan bottom until beef is no longer pink, about 5 mins. Add tomato sauce, chicken broth, brown sugar and vinegar; bring to simmer. Reduce heat to medium low and simmer, uncovered, stirring frequently and breking meat up so no chunks remain, until liquid has reduced and thickened (mixture should not be completely dry), about 10 mins. Adjust seasonings with salt and pepper. Makes enough for 8 tacos, serving 4.
