i'm going to a dinner club this weekend, and have the task of bringing a dessert. i would love to make it a cooking light one - but, although i've cooked a ton of cl dinner recipes, i've barely cooked any dessert ones. soooo, i'm looking to all you people with a sweet tooth to point me in the right direction.
what are some of the best cl desserts you've made so far? the kind that people rave about... and even ask you for the recipe!

My husband's two favorites so far are the ameretto apple crisp and the lemon swirl cheesecake. I also made this other recipe from CL- it was with blackberries and you bake it in a pan of about an inch of water. The bottom of it turns into a pudding. It was really interesting how that worked. I can't remember the name of it, I found it on my mastercook software, only I would use blueberries instead of blackberries. I'll see if I can find the name of it. I posted a review a couple of months ago.

Okay, found it. My husband liked this one alot because it was very light tasting. Not too much after a big filling meal and not too too sweet,either.
Blackberry-Lemon Pudding Cake

1/4 cup all-purpose flour
2/3 cup granulated sugar
1/8 teaspoon salt
1/8 teaspoon ground nutmeg
1 cup low-fat buttermilk
1 teaspoon grated lemon rind
1/4 cup fresh lemon juice
2 tablespoons stick margarine or butter -- melted
2 large egg yolks
3 large egg whites (at room temperature)
1/4 cup granulated sugar
1 1/2 cups blackberries, blueberries or raspberries
Cooking spray
3/4 teaspoon powdered sugar
Preheat oven to 350º.
Lightly spoon flour into a dry measuring cup; level with a knife. Combine
flour, 2/3 cup granulated sugar, salt, and nutmeg in a large bowl; add
buttermilk, rind, juice, margarine, and egg yolks, stirring with a whisk
until smooth.
Beat egg whites at high speed of a mixer until foamy. Add 1/4 cup
granulated sugar, 1 tablespoon at a time, beating until stiff peaks form.
Gently stir one-fourth of egg white mixture into buttermilk mixture;
gently fold in remaining egg white mixture. Fold in blackberries.
Pour batter into an 8-inch square baking pan coated with cooking spray.
Place in a larger baking pan; add hot water to larger pan to depth of 1
inch. Bake at 350º for 35 minutes or until cake springs back when touched
lightly in center. Sprinkle with powdered sugar. Serve warm.

Gee, that is a toughie. There are so many. I am going to go with the italian cream cake (which is calling my name as we speak) or cherries in the snow or the mocha trifle (don't remember the exact name) or the toffee brownies or the brownie cheesecake torte.
Of course, these are just the ones that come to mind immediately. Let me know if you need any of the recipes.

I agree with MrsReber about the Lemon Swirl Cheesecake, that was really good. Another good one is the Apple Cake, I can't remember the full name but I think it was on the last page of the January '00 mag. I agree with Susann about the Brownie Cheesecake Torte, it was awesome. Another good one is the Huckleberry Coffee Cake (used blueberries) in the 5 Star cookbook that is wonderful!

On the same line as the blackberry dessert. there was one for a praline dessert. Baked a great cake on top with a yummy carmel type sauce on the bottom. But, I think this is the kind of dessert you want to eat out of the oven with ice cream. I am not sure it would carry well.
If you like chocolate, another one of these magic cakes with sauce on the bottom is chocolate with a fudge sauce. I get rave reviews everytime I make it.

Yum! Desserts are my favorite part!! I would have to say that I really enjoy the Cinnamon Apple Cake that someone else mentioned it is in Jan. 00. ALso I really enjoyed the German Choc. Bundt Cake and the Gingersnap Cheesecake!! Good Luck and let us know what you try!

I vote for the lemon swirl cheesecake and mocha fudge pie. Both absolutely delicious!
I vote for the Jamaican bannana bread, lemon sour cream pound cake, and german chocolate bundt cake!!- All excellent and yes everyone asks for the recipie everytime I make them. Good luck!

Hi. CL has many good desserts mentioned in the other posts (apple cinnamon, the banana rum glaze, cheesecakes & for this time of the yr I like this one)
Pumpkin-Spice Bundt Cake
The rum glaze will seep into the cake if it's spooned over it while the cake is still warm.
31/4 cups all-purpose flour
1 tablespoon baking powder
21/2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon ground nutmeg
1/4 teaspoon salt
11/2 cups fresh or canned pumpkin puree
1/2 cup applesauce
11/2 cups granulated sugar
1/2 cup stick margarine, softened
3 large egg whites
2 teaspoons vanilla extract
Cooking spray
3 tablespoons dark or light brown sugar
1 tablespoon dark rum
1 teaspoon skim milk
3 tablespoons powdered sugar
Preheat oven to 350`. Combine first 6 ingredients; set flour mixture aside. Combine pumpkin and applesauce; set aside. Beat granulated sugar and margarine in a large bowl at medium speed of a mixer until well-blended (about 5 minutes). Add egg whites and vanilla, beating well. Add flour mixture to sugar mixture alternately with pumpkin mixture, beginning and ending with flour mixture. Pour batter into a 12-cup Bundt pan coated with cooking spray. Bake at 350` for 50 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan. Combine brown sugar, rum, and milk in a small saucepan, and cook over low heat until brown sugar dissolves. Remove sugar mixture from heat, and add powdered sugar, stirring with a whisk. Spoon glaze over warm cake.
Yield: 16 servings (serving size: 1 slice
Our two CL dessert favorites are the Cinnamon Apple Cake from Jan '00 and the Honeyed-Apple Torte from Sep '99.

'nutty apple spice cake with butterscotch sauce' is my favorite!!!
i've also enjoyed the ooey gooey pb & c brownies, the fresh orange tart, and the cinnamon apple cake.

I haven't made it in a long time but the one I think of first is the CL Italian type dessert with a bread pudding crust, red grapes and fresh rosemary. It was very very unusual and great. Not too sweet.

We love the Cinnamon Apple cake from the January/Feb. 2000 issue and the Lemon Pound cake from the April (?) 2000 issue. The Lemon Pound cake is wonderful topped with fresh strawberries!

I guess that I am not alone here when I say the best dessert I have made from CL is the Cinnamon-Apple cake. It is so moist and yummy!!!

One of the best is the Lemon Pound Cake with blueberries from the July 19998 issue. It was on the cover and was a reader recipe that the magazine staff lightened. Be careful because there have been other lemon-blueberry cakes that were not as good. Also, we loved Angela's Flan, which was in March 2000, I think.

Our favorite is the Lemon Bars, which were published earlier this year (I'd have to go search up the issue to tell you which one).
I've made this for office parties, potlucks, etc., and it's always a hit.
