I made this for our 4th of July cookout yesterday, and it was WONDERFUL! DH had 3 helpings!! :p We really enjoyed it. I paired it with pork chops that were marinated in a honey-jalapeno mixture and we cooked some asparagus on the grill.

I will say that this salad does take a lot of prep work, but it is so worth it!!!

Ha ha, Linda! I was thinking as I posted the review taht I should just post the recipe for the pork chops! :D

Here it is:

Jalapeno Honey Pork Tenderloin from Simply Colorado, Too

1/3 C Honey
3 tbsp reduced sodium soy sauce
1 tbsp sesame oil
2 jalapeno chiles, seeded and finely chopped
1 tbsp grated gingerroot
1/4 tsp red pepper flakes
2 (12 oz) pork tenderloins (we just use pork chops)

Combine all ingredients in a 1 gallon zip top plastic bag, shake to coat. Refrigerate for 8 hours, turning occasionally. Discard marinade when ready to grill.

Grill over medium coals until a meat thermometer insterted into the thickest part registers 160 degrees. Remove to a serving platter and cut diagonally into 1/4 inch slices. Let stand covered for 10 minutes before serving.

Thank you for the tenderloin recipe, Lara! I made this salad yesterday too and yes, it is a lot of prepwork but it is very good. I added more lime and chipotle to the dressing.

I made the Southewestern Potato Salad for the 4th of July. It was fabulous. It did take some prep work, but it was all worth it for a special occassion. After his first bite, DH commented "This is the best potato salad I have ever eaten!!" :) This salad is very flavorful and fresh tasting with lots of different textures. We loved the smokey chipotle flavor and the cilantro. It's not your traditional, creamy potato salad, but that's what makes it so good, in my opinion. Be careful not to overcook the red potatoes. Because there's no mayo on this salad, there's nothing to cover up overcooked potatoes.
