Hi. Well I have heard & made flavored butters which I also freeze for use later on in fish etc. I have heard of tomato butter which I will post here and just in case you are looking for something different for FAll a cranberry butter, but not a salsa butter...

TOMATO BUTTER
3 shallots, minced
1 tablespoon tomato paste
3 tablespoons water
3 tablespoons wine vinegar
16 tablespoons (2 sticks) butter, small pieces
2 teaspoons crumbled dried oregano
1 teaspoon lemon juice
Salt & white pepper to taste

Mix shallots, tomato paste, water, and wine vinegar in a saucepan. Reduce mixture by cooking over medium heat until approximately 2-3 tablespoons of liquid remain. Whisk in butter, 2 pieces at a time & mix in oregano and lemon juice. Season Tomato Butter to taste with salt & pepper.

Cranberry butter
Good on rolls and muffins
1 (16 oz.) can whole berry cranberry sauce
2 cups butter or margarine softened
1 Tbls. grated orange peel
Directions
Combine all ingredients in a large mixing bowl, beat on high speed for 2 minutes or until creamy. Spoon into a crock or dish and refrigerate. Makes 3 1/2 cups.

American Spoon Foods (www.spoon.com) has several fruit "butters" that contain no real butter (or margarine), just lots of fruit that they cook down to a smooth consistency. It's really wonderful; we've got a jar each of apple & cherry butter sitting in the fridge right now!

After having made the pumpkin butter that was posted last week I got to thinking that it would be neat to also have salsa as a "butter". Any one heard of such a thing or a receipe?
