Hi all
I am making the blueberry pecan cake from Cooking Light and it calls for quite a bit of butter. Have any of you ever used canola oil in place of the butter or did half butter and half oil? I think it calls for 5 tbsp of butter....any input would be helpful

I have substituted oil for butter in many cakes and quickbreads without a problem. I haven't made this particular one, but my guess is it would be ok either to subtitute all or some of the butter. You might also want to substitute apple sauce, if you've got some on hand. It's my favorite new substitution for butter/fat. (1:1 ratio)

I've done subs occasionally, but always depends on what it is...
remember that butter has water in it so you'll cut back a little on the oil.
