View Full Version : Do you use a potato ricer??

I've read so much about how nice potatoes come out when a ricer is used. But I've never had them served this way. Is it more work than its worth? or once you use it are you hooked?? Do I buy one? a ricer that is? or will it sit in the drawer?

Once you get one, you will be hooked! Especially for the Thanksgiving dinner, you will need one if you make a lot of potatoes. I love mine! Do you make mashed potatoes often or just for holidays? I mostly use mine for holidays or enteraining - wasabi mashed potatoes-great recipe but not lowfat-oops.

I bought one of these 21/2 years ago, when I was pregnant with our first son. I thought I would be super mom and make my own baby food. I still haven't used it. However, I think about it often and still would love to try it. Mine has two different sized disks for different consistancy. I have always heard it makes great mashed potatoes.

I have a potato ricer and though I like it, I must say it spends a lot of time in the drawer. It does make nice mashed potatoes with no lumps. One of the purposes of using a ricer, besides eliminating lumps, is that the potatoes retain their texture better. Over-beating potatoes can cause them to become gummy and unappetizing - I had that happen once. However, I find that it's a bit cumbersome and I have to be "in the mood" to use it. And my kitchen is small, so it was hard to find a good place to house this thing!

I have to second that lindrusso - actually bought one myself - and was given one last Xmas and still in box - when I REALLY get energetic I use it - but could probably count on 2 hands how many times I've used it in a year......they do make amazing 'potatoes' however, you gotta put each potatoe in - one at a time......I guess it's good to have - but in my opinion - not something that one would 'have to have'...lanie http://www.cookinglight.com/bbs/smile.gif

I love my potato ricer! I don't know how it does it, but my potatoes even taste different!

Bon Appetit had a couple of wasabi recipes this year. Here is one of them
Here's an inventive use for the horseradish that most people know as a sushi condiment.

3 pounds russet potatoes, peeled, cut into 2-inch pieces

3/4 cup whole milk
1 tablespoon wasabi powder
1/4 cup (1/2 stick) butter

Place potatoes in large pot of cold salted water. Boil until tender, about 20 minutes. Drain. Return to pot; mash.

Combine 3/4 cup milk and 1 tablespoon wasabi powder in small bowl. Stir to dissolve powder. Add milk mixture and butter to potatoes. Using electric mixer, beat potatoes until fluffy and smooth. Season potatoes to taste with salt and pepper. (Can be prepared 2 hours ahead. Cover and keep at room temperature. Rewarm mashed potatoes over low heat, stirring frequently.)

Serves 6 as a side-dish.
